Quick and delicious one pan #risotto

We topped this with spicy chorizo. Give pulled chicken or feta a try too.
Made in the Pep Wok, it’s super quick and easy for any day of the week.

Inspired by a @FRANKIEGAFF risotto recipe!

Ingredients (served 3):
120g risotto rice
4 garlic cloves
1 onion
1/4 broccoli
1 tsp tomato puree
400g chopped tomatoes
500ml veg stock cube (add more if you need it)
1 tsp dried basil
Half chorizo sausage
Hand full of cheese (or more to taste)
1 tbsp cooking oil

Method:
1. Add oil to the pan, fry onions for a few mins then add chopped garlic and cook for a little longer.
2. Add rice, tomato puree, stock, broccoli, chopped tomatoes and half the basil. Stir, bring to the boil the reduce the heat for 20/30mins. Keep stiring occasionally.
3. Once cooked stir in the rest of the basil and grated cheese.
4. Plate up and top with crispy chorizo, enjoy!
