I cut mine in half and cryo vac both sections for later.Today I brined the pork in apple juice, whole garlic, whole peppercorns, sugar, salt and some thyme and rosemary.I rubbed it with some olive oil then dusted it with some Holy Gospel from Meat Church.I then smoked it for about 3 hours at 250 degrees till I hit a internal temp of 140 degrees.After about an hour I started basting it with unsalted butter, thyme, rosemary, honey and roasted garlic.Highly recommed the dish as its an easy cook and realtively cheap in price.
