Don’t sleep on the Costco rack of Pork.

  1. Its cheap at today’s prices. I cut mine in half and cryo vac both sections for later.

    Today I brined the pork in apple juice, whole garlic, whole peppercorns, sugar, salt and some thyme and rosemary.

    I rubbed it with some olive oil then dusted it with some Holy Gospel from Meat Church.

    I then smoked it for about 3 hours at 250 degrees till I hit a internal temp of 140 degrees.

    After about an hour I started basting it with unsalted butter, thyme, rosemary, honey and roasted garlic.

    Highly recommed the dish as its an easy cook and realtively cheap in price.

    Rack of pork is great. Was going to say that looks mighty small before I saw you cut it in half.

    I had one a few weeks back and it was one of the best meals I’ve ever made. So tasty and a good amount of food for barely over $10.

    I made a pork crown roast for Christmas a few years ago. Two racks, trussed together. It was fantastic!

    Been looking for a rack like this but our grocery stores don’t sell them like that. Will have to check our Costco for it now
