This is the third year I'm trying this and has worked out pretty well each of the first two years. Lamb leg hung over an Oak and Cedar Flame for 4 to 6 hours and then finished in the oven until dinner time. I've had to toy with the height and protection for the bottom so that it doesn't get too burned. I tried the cast iron pot as a shield but couldn't quite find the sweet spot where the pot protected the tip of the roast while the flames are high enough to cook it.

What is it hanging from?
Cedar? Very oily and can be poisonous. Generally not a smoking wood. People use planks to impart some flavor in fish but the idea is to not burn them much if at all.
