hi everyone and welcome back to my
channel today’s recipe is chicken over
rice and I have some salad aside is a
famous uh recipe for uh the trucks in
New York and now here in Philadelphia
too we have a lot of tracks of chicken
over rice is a street food chicken over
rice I’m making it here for ifar or you
make it for
dinner it’s so delicious and ites and
easy to
make uh it’s three steps we have the
step of the making the rice then the
chicken and I will show you also uh the
white sauce how to prepare the white
sauce in the end of the video and if you
like some salad you put salad aside it’s
a complete
dish for the rice I have olive oil and
butter I have here one dry
Lemon Bay Leaf uh
cardamom star Onis and cinnamon sticks
two of them one or two I will uh Brown
them a little bit in this oil and butter
until you know they release their flavor
but don’t get burn don’t burn before
that I add the rice here I have a 1 and
1/2 cup of uh basmati
rice and mix it uh good with this spices
and
oil I can Brown it a little bit too
before that I add the
water uh we warm in the water for the
seasoning I’m using some salt uh also
cloves powder or you have if you have
the whole ones use the whole ones few of
them like three four some black pepper
and curry powder I have here a little
spicy curry powder
like a small spoon of it mix everything
but don’t burn the
spices now I’m adding the hot water will
add almost three cups because I have one
and 1/2 cup of bmti rice you R the rice
in the beginning two cups and the third
cup is not
full I don’t add the cold water in the
beginning
mix everything I will cover it then uh
turn the heat to very low until it
absorbs all the water and the rice will
be
ready as you see here the rice absorbs
all the the liquid the water and it’s so
fluffy and don’t stick it’s not sticky
it’s soof fluffy rice that’s how it
should be if you cook it in a low heat
and follow all the steps it would be
like
that and after I turn the stove off I
cover it with a piece of clo then uh put
the lid like that steam don’t uh make it
sticky
after for the chicken I season it with
salt pepper here I have only chicken uh
tenders I cut them
small and I add also salt pepper garlic
powder onion
powder and the chili powder or cayen
pepper if you like it a little bit
spicy and some uh paprika if you have
smoked paprika will be better uh some
cumin not too much a little bit of
cumin and the curry powder that we use
the same one for the the rice
also uh I add uh two big spoons of uh
Greek
yogurt that’s uh leave the the meat
tender when you season your chicken if
you add the Y the plain yogurt or Greek
yogurt to it the chicken be tender if
you season it and leave it R for uh you
know few hours or
overnight now in the pot I put a olive
oil and butter I will cook this uh
chicken or saut the chicken uh on high
heat I don’t want the chicken to be to
release uh the water as you see here
keep mixing it mixing
it until it gets uh well
done but you see it didn’t need to
release no uh
liquids here that’s the final uh step
the chicken is uh well
done for uh the
sauce I use here half quantity like two
spoons of mayo with two spoons of uh
Greek yogurt or you can use two spoons
of uh sour cream also you can use the
whole quantity
Mayo uh and I add apple cider vinegar as
spoon of apple cider vinegar uh honey
salt a little bit of salt black pepper
and dried
parsley and we add the honey to
neutralize the acidity of the this apple
cider vinegar then we mix
everything if uh you don’t want to add
the apple cider vinegar you can squeeze
a half lemon lemon juice you can put
lemon juice there too in place of Apple
side the vinegar and your sauce this is
the texture of the
sauce you can use it with this recipe or
also for uh fried chicken tenders or um
fish any other recipe that you need as
sauce with it I use it sometimes for a
salad
too and now every tank is done we will
uh put food in the plates we plate
it we put the rice first the the rice is
so fluffy and
flavorful if you are not adding salad
you make the rice in the bottom of all
the plate for the people that don’t want
salad on their
plate uh for the other plates I will add
only half or 2/3 of the plate uh rice
and uh the other part uh I will add
salad you can add lettu uh I have here
spinach
uh tomatoes cucumbers if you like onions
any kind of salad you like you can add
it aside and you can do a third of the
plate or half of the plate salad if you
don’t like uh a lot of
rice I like you know to have a salad
with my uh rice and the food a lots of
fibers is
good
then we will uh put on the top the the
chicken now the chicken the chicken you
can add it small like that or medium
however you like the
chicken I will split the chicken that I
have on three
plates before before that I add the this
the white sauce and usually I add the
Sriracha hot sauce
also for the white sauce I put it on
that uh container or to be easy to put
on the top of the the chicken and the
rice if you don’t have something like
that you can use only the
spoon
I put it on the top of the salad and the
the chicken and the
rice and the rest of it you can put it
aside in the table if anybody like more
you can add more uh white sauce for the
sriracha sauce if you like it’s
spicy I put it on the
top but not on the top of the salad I
put it only on the top of the
chicken and the
rice and that’s uh the plate for today
that’s the chicken over rice with salad
