Mama every now and again I like to go
down memory lane and revisit some of the
places I used to grow up so I I decided
I was going to go to the old
neighborhood where I used to play in the
yard all day long until them street
lights came on and everybody used to sit
on the PO and watch each other but I
must say the old neighborhood don’t look
the same like it used to and I I
remember used to going up to that
chicken restaurant that set up on the
corner where the old folks used to sit
in the lobby all day long like they
ain’t have nowhere else to go and I used
to order me a country fried steak
biscuit with sausage gravy with cheese
and honey and them old folks used to
talk about me talking about and that
young fell he he kind of funny but I
decided I was going to go back to that
chicken restaurant and get me one of
those country fried State Biscuits but I
must say things don’t look the same like
they used to so I decided I was going to
make my own country fried steak biscuit
with sausage gravy so I I got me some
cube steaks and I cut those in half and
I season them down with some poo Wayne
Cajun seasoning I went on and put that
in some buttermilk and some eggs so it
can sit and get tender and I season me
some flour with some poo Wayne caj and
seasoning some salt some pepper little
onion powder and I I went on ahead and
put that in that batter and I dropped
that into some hot oil and I fried till
it was golden brown and crispy and I
pull those out and I put those in the
pan and I slid them in the oven so they
can hang out with those biscuits and
today about good and ready and I went on
and started on my sausage gravy so I got
me some chicken patty sausage and I put
those in my pan and I got my spatula and
I broke them down into little pieces and
I sifted me some flour up in there then
I went and got me some milk and I pulled
that up in there and I well and season
it down with a little garlic salt little
pepper little onion powder of course
some of that poo Wang Cajun seasoning
and I when they got me some unsalted
chicken broth and I went on ahead and
pulled that up in there and then I added
a little bit more milk until it was
about right and I stirred it up till it
was good and cream and I said oh yeah
that’s that’s about right now so it’s
time for me to eat so I I went and got
me one of those hot biscuits and I took
my butter knife and I went on ahead and
cut it in half and I I opened that
biscuit up and it was steamy and Flaky I
said oh yeah that’s about ready now so I
went and got one of those country fried
steaks that I had made and I put it
right on top of that biscuit and I came
back with some cheese and I went on and
got me a spoonful of that chicken
sausage gravy and I I pulled it right
over that country fried steak and I even
pulled it over my cheese and I said oh
yeah this the way I like it I I even
like honey on mine so I drizzle a bit of
Honey up on there and I went over ahead
and assembled my sandwich and I said oh
yeah it’s time for me to eat now cuzz
