[Music]
hello this is Chef John from
foodwishes.com with turkey cocktail
meatballs with orange cranberry glaze
that’s right a takeoff on the classic
beef cocktail meatballs done in grape
jelly which if you’ve never had is quite
a delicacy well this is a special
holiday version using turkey that’s
right lean Bland tasteless turkey but
here’s what we’re going to do we’re
going to spice it up now all these
spices will be on the website so get all
the amounts we got a little poultry
seasoning and garlic salt and onion
powder by the way if you want to make
this fancy and use fresh onion and
garlic go for it but I figured it’s the
holidays you’re going to be busy and
most of the people that eat these are
going to be you know pretty drunk so I’m
going to let you use the uh the powdered
version for this recipe only of course
we’re going to have salt in there and
fresh ground black pepper little Wisher
sauce and then one beaten egg now don’t
beat your egg in a separate container
and then pour it in here just put it on
the side use a fork to beat it then you
don’t have to wash an thing see how I
save you time all right a little bit of
milk and we’re going to give that a mix
so what I like to do I like to mix the
meat turkey in this case with my wet
ingredients first then I will sprinkle
over my plain breadcrumbs and mix that
together now this is a very soft mixture
so it’s very important that you let this
sit a little bit to set up in the fridge
about an hour is fine so I’m going to
wrap this up I’m going to refrigerate it
for about an hour and then we’re going
to shape them into meatballs now what I
like to use is a sorbet scoop because I
think it works really nice and they all
come out the same size so you can just
do with your hands if you want but if
you have one of these little do dads
they work really nicely by the way one
production tip scoop them all first then
wet your hands and make them into nice
round perfect balls if you scoop one
shape one scoop one shape one just takes
longer oh my God I cannot believe I did
not do a that’s how I roll joke all
right so all my meat balls are shaped
next we’re going to Brown them over
medium heat in a skillet with a little
bit of olive oil or vegetable oil now
what I like to use to turn these cuz we
do want to try to get them Brown on all
sides even though I know it’s a ball it
doesn’t have a side so you know what I
mean we’re going to Brown them on as
many surfaces as possible I like to use
a couple forks I think it works very
nicely so just turn those around until
they look like that I’m going to turn
off the heat remove the meatballs and we
are going to do our cranberry orange
glaze I got some diced jalapeno and some
diced red Fresno chilies quite optional
but I think you should put them in cuz
it’s festive and it’s like you know
holiday colors and then the star of the
show that’s right canned jellied
cranberry sauce oh yeah ribbed for your
pleasure all right we’re going to use
about a half a can of this this is like
the only use for this product do not use
this like on your turkey it’s kind of
gross but here we’re going to melt it
with some orange marmalade or orange
jelly with a little bit of water that’s
going to be the base of our glaze all
right and don’t worry about it being all
smooth this is going to totally break
down and smooth out as we cook it with
the meatballs bring that to a simmer if
you’re using them add your hot peppers
give it that a stir and then the rest is
easy simply put your meatballs back in
and simmer them until they are cooked
through and your glaze is reduced we’re
going to season with salt and pepper if
needed taste it of course now you can
adjust at any point here with more water
if it looks like the glaze is getting
too thick and the meat bottles aren’t
cooked yet add a splash of water and
cook it a little more and then if you’re
like me and my friends we’re a bunch of
savages we just eat it right out of the
pan with toothpicks but if you want to
be all you know Martha Stewart go ahead
and put it in like a chafing dish or
something like that put it out on your
holiday buffet and you have a fantastic
appetizer and is it as good as beef no
it’s turkey of course it’s not as good
as beef but that’s not the point this is
much lower fat very tasty incredibly
tender you’re going to be amazed at how
tender and soft these are by the way
random food fact turkeys are related to
dinosaurs that’s right so while you’ll
never eat dinosaur meat this pretty
close anyway I really hope you give them
a try all the ingredients are on the
site and as always
enjoy

  1. I brown meatballs like cubes… 4 sides and a top plus bottom. Just seems natural

  2. I just made these, I loved the ribbed for pleasure part, ha ha. Yeah after watching and looking this up I subscribed to your video. I really like the editing, quick, I can go back and watch again while I make them. I'm using meat though instead of the Turkey you recommended. I also chopped my own onions and garlic. So far they have came out great. Thank you for the video, my party is in a few hours!!!

  3. Omg made this atleast 4 times already my husband is in love with these meatballs and he dont even eat meatballs but they are THE BOOOMMMBBBB!!!

  4. Is this something you can make the night before and stick in the fridge? Or should I just prep the raw meat the night before and then cook everything the day of?

  5. Ribbed for your plessure, man these videos are ace, food tutorials need lightening up!

  6. I made these for my family christmas get together and they came out great, everyone loved them. They were not overly sweet the way one might think from the marmalade and cranberry sauce, between the meat juices and the heat from the chiles combining with the sweet my nephew thought is was a barbeque sauce

  7. I like cranberry sauce from a can, long as its Ocean Spray, other ones are gross. Also you can brown meatballs in the oven with out having to do all the turning, and with out them being all dry and gross. I use a cookie scoop and works out to 20 minutes at 350. If I'm doing pork or beef its about 30 minutes. Pan's to much hassle when I'm doing more people snax then just these noms.

  8. How would you change this to do in crockpot after cooking the meatballs? That way they stay hot-don't have another way to keep them hot…love your videos!

  9. Your recipes are awesome, I’m definitely going to make this for Christmas dinner. My family does the potluck thing every year now at Christmas, my grandma used to do it all herself but we help her now, my job is cranberry sauce this year but I’m going to be extra and surprise them with these! Thanks for sharing
