We subbed thinly sliced sautéed Brussels for the Asparagus because the asparagus was bad on arrival ( yes I let HF know) and decided to go with what we had on hand for veg. Still an absolutely great recipe. I never would have thought about using mandarin orange slices with steelhead trout but it was fabulous. Pictured as an extra (in jar) is vegetarian caviar which was a fun and tasty add to a few bites of fish. And wine. YUM. This is Conference cab sav on sale at Costco.
