I think a few Serranos could fit on there… But I’m thoroughly jealous

Have you done this before? If not, prepare to be disappointed. I would smoke like 1/4 of that and boil the rest, otherwise your sauce is just gonna taste like smoke with a tiny hint of pepper.

Those italian long hots are really underrated. They are fantastic on the grill, I always throw a few on when making burgers/steaks/fish to go with it.

So…. I would pan sear and sweat them in a bread bag first, then briefly smoke after removing the skins.
I’m not an expert, but I’m guessing you’ll end up with too much smoke flavor in the sauce this way.
But… I’m no whale biologist. Let us know how it works out.
