Ingredients
• 1 lb Brussels sprouts, halved
• 2 thick cut bacon (or 3-4 regular cut), snipped
• 1 Tbsp coconut oil
• 1/3 cup raisins, chopped
• ½ cup chicken broth
Directions
1. Slice Brussels sprouts in half at the core.
2. Snip bacon into slivers with kitchen shears or a knife.
3. Preheat pan on medium-high. Pan fry bacon until browned, stirring occasionally. (We recommend cooking until crispy.) Remove and set aside on a paper towel. Do not remove bacon grease from pan.
4. Place Brussels sprouts flat side down into the pan. Cook covered for 5 minutes.
5. Add coconut oil, raisins and chicken broth. Cover, leaving a small opening for steam to escape, and cook for 5 more minutes. Add salt and pepper to taste. Enjoy!
