so welcome to a beautiful February Day
in South Devon behind me here is a
little section of the lovely suom
masterer and I’m out on a foraging uh
Expedition with Chloe hello mission is
to try and find some clams today and
later on really want to make a clam
chowder gear is very very
simple we just have a foraging bag to
collect the clams a couple of small
rakes you can get these from any
hardware store excited Chloe yeah we’re
going
ahead about a mile down the estri where
the mud is replaced with more
gravel and we’re going to rake through
it see what we can
find what you found I found the football
sry that’s not a football it’s a rugby
ball it’s rubbish out here isn’t it
we’ll collect it on the way back
okay oo there a passageway it is come on
we near there it’s a long way
away wow what you found I found this oh
yeah it’s stink oh well done Chloe so
yes so
these these clams absolutely delicious
that’s what we want to find but in the
living form and the living form
lives under the under the surface now
why something need to go quite
deep oh at that there look at that that
is that’s what we’re looking for okay

at this that’s how deep they are get get
your rake in there see if you’re can to

one rinse it in the water over here and
we’ll take a look at

it’s it’s a clam yeah hold it up to the
camera it’s a clam well done and it’s

one so they’re quite deep they’re about
I 3 in deep get it you got

well done go rinse it off in the water
get it in the
bag hey daddy well done oh the C they’re
coming thick and fast
here well done keep looking I’ll put the

tripod well done yeah rinse it off and
put it in the bag 13 13

Chloe that’s a big one look at that it’s

boy when you find one it makes that

water in the space of about
20 minutes we have lovely bag of clams
got more like 30 clams
and pretty good haul I’d say Chloe you
so these clams are really delicious um
but to get the absolute best quality out
of them we need to take them home and
purge them so we will make a special
solution saltwater solution um we’ll
leave them in the fridge overnight in
that solution so they can spit out all
the mud and grit and then we will cook
them tomorrow Daddy’s doing a straddle
what’s that Daddy’s doing a straddle is
that a gym move yeah is
it every
clam needs to be scrubbed with a brush
to get all the mud off the outside of
the
Shelf okay can you see I have that’s my
world record that’s clean so take
another clam I want everyone as clean as
you can make it all right got it well
done oh with my world
record nice and clean yep these are just
beautiful
clams oh wow this is actually my R
record is it yeah okay wash it with a
scrub with a scrubbing
brush so the clams have been scrubbed so
now they need to be purged so it’s a
general roll of thumb you need 35 G of
salt per liter of water to make the
proper Briney solution if these clams go
into fresh water they will die so they
have to go into salt water um ideally
for about 24 hours so they can get rid
of all the grit and mud these clams
haven’t been living in the mud so they
shouldn’t be too bad they’re more grally
thicker kind of grain but all of the
same we’re going to purge them for about
4 hours before we um cook them this
afternoon so Chloe we have 2 and2 L of
water here so put your salt
in uh we got about 85 G of
salt that’s it tip it all
in and then you get your fingers in
there and just Stir It Around get that
salt to dissolve for me
please great you’ll notice the salt
start to dissolve in a minute why do you
think the clams need salt water Chloe um
because because they live with the salt
water yeah they live in the sea water so
it’s really important to make them salty
water good po them all in po pop pop
don’t let them fall off the edge oh
CRA and once the clams all get into that
water they all just assume the tide has
come in and they’ll start siphoning
again um you sometimes read that it
helps put a handful of oats in with them
or corn flour but in my experience that
doesn’t really make any difference all
they need is some
water and
then yeah they will soon we’ll come back
in half an hour they will have started
putting their siphons out look look
daddy look actually it’s moving yeah
they will start moving in a minute so
let’s give them um let’s give them half
an hour Chloe and we’ll come
back after an hour or so you can see the
clams are busy filtering the sea waterer
and they’ve also passed out lots of
Mucky
bits including the clams this recipe
requires a pint of water two chopped
carrots four sticks of celery chopped
one chopped onion two large potatoes cut
into little cubes 2 tablespoons of flour
half a cup of cream and half a cup of
milk start by adding the water to a pan
and bring it to the boil then Chuck in
your
clams pop the lid on and wait a minute
or so until they’ve opened
up transfer your clams into a bowl and
any that haven’t opened need to be
discarded it’s really important you do
not throw away the clam juice this bit
is
delicious now add a knob of butter to
the pan and Chuck in your vegetables
thanks R leave these to soften for about
10 to 15

minutes while the vegetables are cooking
time to prepare the
[Music]
clams it’s y Daddy it’s y after
vegetables have softened for about 10
minutes add your 2 tblspoon of flour and
stir the flour in until you can’t see it
anymore then return your clam juice to
the
pan you can filter this but I just pour
it in carefully so that none of the grit
goes
in finally add your milk and cream and
then let this simmer for about 15 to 20
minutes
after about 20 minutes add your clams
back in and you’re ready to

so
delicious it’s hard to describe how
concentrated the flavor the seafood
Taste of those tiny little clams is for
such a small Critter they are so tasty
so packed with flavor and in the creamy
chowder it is absolutely delicious so
simple to make so fun to go foraging get
out with the kids and they enjoy the
whole process bringing the clams back
purging them getting them interested in
Wild food appreciating nature is what
it’s all about so I hope you like the
