This is the perfect marriage of Italian wedding soup and pasta fagioli, coming together to create this masterpiece I decided to call La Grande Zuppa Italiana.

Ingredients:

– 2 tablespoons of olive oil
– 6 shallots, minced
– 4 cloves of garlic, minced
– 1/2 pound of pasta- Shape Ditali @lamolisana *
– 64 oz (2 quarts) of chicken stock
– 32 oz of water
– 4-5 sprigs of thyme
– 1.5 pound of little meatballs
– Parmesan rind
– 2 cans (15 oz each) of cannellini beans, drained and rinsed
– 1 bag of organic spinach, chopped and sautéed with a little olive oil and 1 teaspoon of salt
– 1/2 cup of grated pecorino Romano or Parmesan

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the minced shallots and garlic, and sauté until softened and fragrant, about 3-4 minutes.

2. Add the pasta, chicken stock and water to the pot, along with the thyme sprigs and Parmesan rind. Bring the mixture to a simmer and let it cook for about 10 minutes to allow the flavors to meld.

3. Once the broth has simmered for 10 minutes, remove the thyme sprigs and Parmesan rind from the pot and discard.

4. Add the meatballs and the drained and rinsed cannellini beans to the pot, and let them heat through for a few minutes.

5. Stir in the sautéed spinach and let the soup simmer for another 5 minutes to allow the flavors to come together.

6. Mix in the cheese, taste the soup and adjust the seasoning with salt and pepper if needed.
