Over the course of a few weeks I notice whole peppers being gone but very not too much plant damage. Today I found a hornworm destroying and entire Tabasco plant- also learned what caterpillar poop looks like.

You’ve been visited by “The Very Hungry Caterpillar”! Those guys can absolutely decimate an entire plant in a shockingly short amount of time. I had one eat the entire right side of a plant one time without touching the other side so then I had to try to deal with the pot always wanting to fall over because of all the weight being on one side!

Black light, and I’ve heard if you shake the main stalk, the worms let out a clicking type noise.

Ugh, that happened to me a couple of years ago. Went out one morning to water my Baklouti, and found it down to nothing more than an upright stalk with a very fat and happy hornworm.
