Indirect heat at about 275 for a little over an hour on my Weber spirit.
Was able to make a few batches of potatoes/ peppers and onions throughout.

    Mmmmm, Nottoli. Might be the single best Italian Sausage in the Chicago area. Fabbri sausage for pizza (so much fennel seed), and Nottoli for everything else.

    Gotta get their giardiniera oil as well.
