This sun gold is only 3 weeks old and is about 8 inches tall. Looking at the newest growth, it looks like it’s already starting to work on flowers. Why so early? How do I prune them off to focus on root development? Does this mean future growth is stunted?

Just clip the little offshoot with the flowers on it. No biggy. You want them well established before letting them fruit.
