    Mixed rice update!
    I made a delicious arroz con fideos on the instant pot and let me tell you how delicious it came out.

    I had a bag of 7oz fideos that cost 48 cents at Walmart so I threw those into two tbsp of olive oil, until browned, then added half an onion to fry together with the fideos, then washed my left over rice, Basmati and Jasmine together, and threw it in the pot with the onions and brown fideos.

    Added salt to taste and since I got about 4 cups of mixed rices, I added 6 cups of vegan chicken stock. Once the stock and rice started to simmer I added the last 3/4 of parboiled rice, then closed the instant pot to cook on high pressure for exactly 7 minutes. When the 7 minutes were done I timed 5 minutes for manual release, and done.

    The result was a delicious fluffy evenly cooked rice that turned out to be a crowd pleaser, and from now on I definitely look forward to making this again with leftover rice!
