There is a place in Santa Fe that uses a 30# slab of concrete and cardboard to “process” their cabbage in the alley.
The butt can and mop gives them earthy tones with a side of food poisoning.
Uhmm, that’s a basting mop and the can helps add a natural smokiness…Only the best restaurants know these tricks.
