These CHEESY BEEF BAKED TACOS have got to be some of the best i make, they are so simple and easy but yet packed with flavor. We all have one of those days when we are hungry for something that will stick to the ribs, and these are it. I love using a combination of seasonings like ground cumin, paprika, oregano, cilantro along with other favorites. My garlic sauce deserves a blue ribbon, it is just heavenly when topped on these tacos, i just cant tell you enough so you will just have to try them and see. I hope you give this recipe a try. ❤️

● 425° for about 10 minutes
INGREDIENTS __________________
2-3 tsp Canola oil
1 lb. 90/20 lean ground Beef
2 red mini peppers (slices)
1/3 Chopped medium Onion
1 Jalapeño (seeds removed and iin slices)
1/4 C. Chopped cilantro
1 1/2 tsp Onion powder
1 1/2 tsp Garlic powder
1/2 tsp Pepper or as needed
3/4 tsp Salt or as needed
1 1/2 tsp Paprika
1 tsp Ground Cumin
1 tsp Mexican oregano (optional)
1/4 C. water
Olive Oil to brush on Corn Tortillas
12-15 Corn Tortillas
Freshly grated Colby Jack Cheese as needed
EXTRAS FOR TOPPING __________
●PICKLED ONIONS
●AVOCADO Slices or crushed
●Your favorite Salsa
GARLIC SAUCE_________________
1 C. Sour Cream
2 large Garlic Cloves (grated on microplane)
Big bunch of Chopped cilantro
Pinch of Salt
Pinch of Pepper
TORTILLA SEASONING ________________
1/2 tsp Onion powder
1/2 tsp Garlic powder
1/4-1/2 tsp Salt
1/2 tsp Ground Cumin
1/2 tsp Pepper
1/2 tsp Oregano

hi everybody I’m Rachel from Rachel cooks with love today I’m going to be making some delicious cheesy beef baked tacos it’s a great alternative to fried tacos and I’m going to start out with my onion I’ve got 1/3 of a medium onion and I’m going to chop it up nice and small now I’m going to add them into my Skillet I’m going to be adding about 2 and 1/2 teaspoon of oil you can use your favorite oil now I’m going to add my onions in here let them releasee their flavor and now I’m going to add my mini peppers now these are sweet little mini peppers I’m going to be using about two red ones now you can use bell peppers of any kind you can use poano peppers and I’m just going to cut them up into thin slices now I’m going to add these in with the onions now I also have one jalapeno I have removed the seeds see I cut it in half you can leave the seeds if you want now these will just add a nice kick to the dish so now I’m going to add this into my skillet look at the beautiful color in here and it smells delicious now I’m going to add my ground beef now most of you know that I always like to use 80/20 ground beef but today I’m going to be using 910 I want it pretty lean I don’t want greasy tacos they’re going to be going into the oven see so I’ve got one pound now I’m going to add my seasoning I’ve got one teaspoon of Mexican oregano I’m going to add it into my Skillet so I’m just going to crush it up like this and I have 1 teaspoon of ground cumin and I have 3/4 of a teaspoon of salt but you can put as much salt as you want and I’m going to add 1 and 1/2 teaspoon of on on Powder I have 1 and 1/2 tpoon of garlic powder 1 and 1/2 tpoon of paprika this will give it beautiful color and flavor and I have half a teaspoon of black pepper and I’m also going to add in about 1/4 of a cup of finely chopped cilantro and I have some water here oh just about a/4 of a cup let all these flavors just come in together beautifully like this so now I’m going to replace my lid and I’m going to let it simmer for about 5 minutes and we want to make sure that we get rid of all that pink color but you don’t want to overcook it so I’m ready to move on to the next step I’ve got my warm tortillas right here I put them into the microwave for just a quick few seconds cuz I want them to get nice and soft and my ground beef is ready right here I’ve got my seasoning seasoning and olive oil now the seasoning was just half a teaspoon of everything that I put in there I’ll put it below in the description box and I’ve got my freshly grated colby jack cheese but you can use any cheese you like now I’m going to start out with one tortilla this is a corn tortilla and it’s nice and soft I’m going to rub some olive oil on it now you don’t have to put a lot of it just a little bit like this see now we’re only going to put it on one side not the other side then I’m going to season it really well like this this will give it a delicious flavor and color your tacos are going to look beautiful when you get them out of the oven now I’m going to flip it over and I’m going to put my meat in here I’m going to put some cheese you want to be generous a little bit more of the ground beef and a little bit more of the cheese then you want to close it up and I’m going to put this on my cookie sheet right here like this now I’m going to prepare another one little bit of the olive oil some of the seasoning turn it over ground beef my grated cheese and just a little bit more of the ground beef on top then I’m going to close it to put it on my cookie sheet now I’m just going to repeat the process now I can’t tell you exactly how many tacos you can make because it just depends how much of the filling you use to fill your tortillas so you’ll have to to be the judge of that I like them just medium full look at this now I’ve got my oven preheated to 425° I’m going to put them just a little bit above the center rack for about 10 minutes and then I’ll see you then super easy so while my tacos are in the oven I’m going to make my garlic sauce so I’ve got one cup of sour cream right here now you can make this in a matter of 2 minutes super quick I’m going to get a large garlic clove and I’m going to grate it in here now you can use as much garlic as you want and that’s good and I’ve got another one I’m going to do the same thing look at this oh yumminess very good I’m going to add some cilantro and I’m going to add a pinch of salt and a pinch of pepper and that’s good I’m going to mix it up really good this is going to be delicious you’re going to thank me for this and this is ready see how easy it is so I’m going to clean up my area and I’ll see you when I get my tacos out of the oven now I’m ready to assemble them I’m going to show you how my Ron likes them with a little lettuce some Tomatoes cuz he says they’re refreshing a little bit of avocado like this and the delicious red onions now these are my onions that I pickled I’ll put a link below and some salsa on top you know it’s got to be hot now I’m going to show you how I like to eat them I like them with just some avocado some of my red pickled onions some of the salsa cuz I love the salsa too so now it’s time for the taste test now here’s my garlic sauce I like to put some right here and here we go M these are absolutely Heavenly delicious especially with that garlic sauce right on top I almost O. M. G! I just made these and I'm speechless. They are beyond delicious! I've only had the taco seasoning that comes in the little yellow pouch. This recipe is unbelievable! I made them so big I had to use a knife and fork to eat them. And that sour cream dip!!!! Holy cow! You HAVE to try these. These tacos are several levels about what I'm used to. I topped them with fresh spinach, spring onions, guacamole, and salsa. GREAT job, Rachel!!!
