
I’ll start off by saying I’m not Korean nor am I well versed in Korean…..anything lol my moms neighbor is Korean and every now and then she’ll bring over a bowl of japchea and I will immediately dive into it because it’s delicious. Is there any other food that is similar?

Not sure if you’re asking for Korean foods that are similar, but for me, I really like the texture of the noodles in general. Pancit is my other favorite glass noodle dish and is Filipino.
I’d suggest making the japchae yourself, but it might not be as good as japchae from a neighbor who is so proud of her cooking (not a judgement on your cooking skills, food from neighbors hits differently lol)!
Jjajang myun is **not** a pretty looking dish, but it’s an insanely delicious, savory dish with a sauce that’s a balanced mix of veg and meat over a bed of noods. I would like it to Korean spaghetti and meat sauce in its ubiquity and popularity.

Mul naeng myun is a cold, savory, buckwheat noodle soup which is super refreshing in the summertime.
Gimbap is a filled rice and seaweed rolled snack akin to Japanese futomaki, but with more approachable savory and sweet ingredients and is fully cooked. It’s kind of like a japchae rice roll.
Deffo try jjajang myun. It’s like the number one takeout food in Korea.
I discovered yesterday that putting pickled persimmons in japchae is incredible. I had some bulgogi, japchae and pickled persimmons from H Mart. Pickled persimmons are like a BBQ flavor bomb (hate that term though), they just have so much complexity, the sweetness, the spicy autumnal dark flavors of the persimmon, the sweet chili sauce, it added so much and tied together the tastes of the bulgogi, japchae and other veggies. I just ate it and I only want to keep eating it more.
Japche is similar and a favorite of mine.
