things that I love in the kitchen my grandparents had wheat feels we made the flow but between that golden wheat suede beautiful red puppies and I used to sneak in collect and make a beautiful bouquet and bring it for the family table for dinner get great ingredients good equipment and you have yourself a simple good Italian meal TOA that means beckoning the whole family to the table for the great meal you have just [Music] prepared it is time for Lydia’s kitchen Chef Lydia Bastianich is joining us for this entire hour and it’s going to be really exciting because she’s brought along um the tools that are going to make our cooking life that much easier in the kitchen and we’ve got a little bit of everything so I’m glad that you’re here I’m Tamara I’m your host and um Chef has brought along a couple things that I actually wanted you to see before we get started into the show what you’re looking at right here on your choice of red or cobalt blue or black is a sauté pan with a lid three quarts and it’s cast iron and when you think cast iron you think yes that’s the kind of cooking those are the kinds of pots and pans that my uh mother my grandmother cooked on this is going to give you that same kind of even heating even cooking lighter weight not it’s not it’s not featherweight it still has some weight to it but lighter than than that traditional old Cast Iron cooking you do not need to season these pans they’re easy to clean you don’t need to do an overnight soak if if you’re making something extra messy um and just really simple and what’s great about these in particular is that you can use them virtually anywhere they are non-stick on the inside enamel on the outside they’re oven safe the including the lid up to 500° and these are a weekly deal drop so going to dive in and when I say dive in this is what I mean you’re going to see some food that is going to make your mouth water because it is lunchtime and so I’m coming on over to restaurant tour celebrity chef author um television personality Chef Lydia banic who’s going to be with us this entire hour and Chef you’ve you’ve already started um I want to show you the diversity of this pan yes it is cast iron everybody loves cast iron so you can see here we’re going to make a a quick stir fry a mellow nice potato s fries a nice steak let me throw that in I just oil the steak a little bit yes and just put it right in and you can sear your steaks you don’t have to pull out your your grill here we’re going so what I did I have the chicken I’m going to Brown the chicken first then pull it out I don’t want it to overcook and then we’ll put the vegetables okay and what and what Chef is using is the nonstick lighter weight it’s about 18 almost 19% lighter weight in this 10in cast iron skillet in your choice of either red or of black ooh I love that Sizzle you like it huh yeah and that what gives flavor to food also and uh you see this kind of pan which is all the qualities of a cast IR pan but quite light yes so and easy to clean inside the enamel on the outside and this and of course let’s do some home pric and I’ll even do a little scrambled egg to show you can go from lunch to breakfast to whatever I love it I love it and that’s what you’re looking at right here and no worries about sticking because with everything we loved about traditional cast iron the things we didn’t love is that it was the food would stick it was hard to clean it was very heavy it was Heavy empty and then when you had a a skillet filled with food it was very difficult for you to lift it up and move it around and so I love that you’ve really taken all of those negatives out of cast iron well you know cast everybody has a cast iron but this is New Wave of cast iron shall we say right all right the lyia style because you know cooking in the kitchen so much I I I kind of know what is is what is needed in the kitchen there you go look look at the sear look at the sear on that at look at the sear on the chicken you want to get it just a little caramelized and what you need to keep the chicken juicy High immediate temperature and we’ll pull that out and then we’ll put the vegetables slowly in okay okay and here let’s see I’m going to use this also to make if you’re also noticing the um utensils that Chef is using that SP spatula we’ve got that coming up in just a few moments there’s also a tongs and a skimmer and a ladle that goes along with that there’s even a utensil holder that goes along with that as well so everything that you see that you’re saying oh I want that too we’ve got it available and you can check hsn.com for look at this look how clean just clean it out yes let’s see this is some more potatoes you know I don’t like to waste anything I love and right in here we going to do the scrambled eggs yeah so if you have a nice large family you need uh a nice size here and scramble the potatoes are ready let’s and look at the chicken that’s coming right along there are no there are no like hot spots and cold spots it’s all even heat the question is you know you don’t overcrowd aart okay if you have a big uh order a lot of people do it in two batches okay so the chicken the vegetables you can over cry you can put them in there they’ll cook perfectly okay see you know that’s my issue is I try to get it all done and I know that oh maybe I put too much in so I’m listening to the chef do not overcrowd your protein yeah let her get caramelized so I think this is see nice yeah get me the plate there yes let me grab this one you’re here to help too yeah oh yes of course of course okay let’s put this oh this looks so good doesn’t it it looks good but you can see it’s not fully cooked you don’t want to overcook it like let me just there we go look nice and clean let’s put a little bit more now of oil because I like my olive oil is good for for you and we can put the vegetables let’s put first mushrooms cut mushrooms okay okay I love this peppers did you notice as Chef was um either pouring out the potatoes or the chicken do you notice that there are double handles here the long one in the back you’ve got a helper handle in the front you also have pore spouts on either side my mom’s cast iron does not have that so you can see see it’s better absolutely it helps you and it has the pors on the side too so if you need to pour the sauce out and here I use the broccoli even the little stems everything uh you can throw the scallions in okay okay let’s see how we’re doing here okay this is I think you know if you seal the steak like this you can finish it on top or you can finish it in the oven nice and easy so that it doesn’t you know you don’t have to worry too much about burning things and things happening okay and I can take this cast iron skillet straight to the oven absolutely yes everything is and I’m just this is one of the steaks that we we pre prepared because you know the time is what it is here mhm and oh look at that that oh my God and with the this one right here let’s put it right you see so this is so handy you can mix or carry or or serve with it just like that that’s done yes okay look at that could you imagine having this for lunch right now all right looks so good let me pull that out and I want to do that frittata which will take a few minutes so do you like butter or oil on your fried eggs I like usually butter but is it okay to have both you could put both and I go you know there is a difference because oil oil will give you a kind of more of a a a flaky kind of whereas whereas this is ready look you can put it away I’m just going to clean it just like that look at that that and you can store it away and it’s done and it’s that okay let’s go to the frata yes you see the heat yes the oil oil you can see right away when it’s loose like that the oil is hot enough and again for frata also if you want crumbled eggs soft eggs then butter in lower temperature if you like kind of uh uh uh uh strands of egg that I Like it Like That Hot Oil and hot I’m going to do that that’s how my husband likes his eggs I’m going to do that this is a master class you so you put in you put in a little tries a little little scallions I think that’s enough okay and I’m going to put some salt all right we’ve got this uh spice grinder coming up as well pepper it is so handy let me tell you look at this okay and here we go let’s see this is just and you can see how Chef has already done the potatoes and two steaks and the vegetables are going and now the frittata okay the frittata is in the vegetables are this is just and this is with your cast iron skillet this is what you’ve been wanting so when they’re wilted now I’m going to put some salt and pepper here as well you don’t put on uh before when it begins to cook look at this look how easy this is yes and handy and especially the pepper is so important that the pepper is fresh you know because pepper is a seed and if if you cook it long it gives bitterness to whatever you cook like this last minute gives the aroma so here we go we put this right in oh that looks so good doesn’t that right oh my goodness all in one pan and here I have a little balsamic vinegar just a little bit of St starch and a little bit of stock and that will pull all of this together look at this and again you want high temperature the cast iron is perfect for that okay now here we are look at this I like do you like the shreds like this I happen to like shreds like this yes does your husband like like this yes that’s how he likes it so okay you got it all right just like that and you put that right on top of some home fries which I did before and this could be lunch could be dinner wow could be whatever and wow again and look nothing’s sticking you just wipe it clean and you’re ready to another pan done and clean no soaking no soaking no soap no none of that look at this look at how beautiful this is okay and then look at the and this came straight out of the oven so let me just remind you all you’re doing is choosing whether you want your 10in cast iron skillet in either black or in red these are enamel on the outside I’m going to show you this in red because I think it’s easier to see do you see how beautiful that is that red enamel going all the way around even the bottom where you can see it says lyia kitchen it’s beautiful 10 in you’ve got two handles the long handle here and the helper handle up front you have two pore spouts nonstick on the inside all cast iron lighter weight Now cast iron is still going to have weight weight do not think this is featherweight it’s still going to have weight but it’s about almost 19% lighter than your traditional cast iron so you know when when we are 20 years old and we’re cooking maybe we’re a little bit stronger in our wrist in our hands and we can hold that cast iron but now where you’re really going to appreciate the fact that it is um a little bit lighter weight but it still gives you the cooking ability that you want that you GRE that we all grew up with so Pacha Yes again look at this this band from the straight here and I want to show you look how beautiful on the inside beautiful and this is beautiful so we have a good meal going here yes we what do you think what do you think oh my God it’s beautiful and again we look nothing’s stuck we clean and then I’ll clean the stove but this is it and it was that simple this is clean simple that’s the funny thing Chef them up all clean you don’t have to clean after me it’s see and that’s the funny thing we all have a past iron story of you cooked something that was extra cheesy or extra something or maybe you burned something and then you had to soak your Pan um you had to season your pan you had to take care this is so much easier than that um because this is the way that we cook now so I’m glad to hear that a lot of you are shopping with us black is the more popular but I will also say very limited so please don’t miss out uh fewer than a thousand of these remaining in red and then and then we say goodbye to those until we can get more in but do you see how much Chef has cooked since we started the presentation you’ve made everything that we see here look absolutely and it’s quite doable and that’s you know at home that’s what you want you want practicality practicality and you know now more than ever is a one putt meal yes I am all for you know put all the ingredients in one in one pot and get it done and get it to the table as you noticed I moved the this I wanted more heat more quick I want it to cook quicker so common sense in the kitchen you know use your when you send something yeah I should be doing that yes and so this will evaporate and turn into a great stir fry as as it is now do we put salt all over the place yes we put yes everything is beautiful do you see how whether it’s breakfast lunch dinner brunch whatever the case is you made faka this could have been anything that we you know pulled out of the oven all in your cast iron that we love you’re going to as well these are customer picks on hsn.com it’s an easy way to cook it’s a it’s a familiar way to cook and there’s so there’s always so many new gadgets and things but sometimes what you’re more most comfortable with is what you grew up with this is cast iron but lighter weight two you can see all of the the love that’s gone into all of and to the dishes that all of the dishes that you’ve seen Chef prepare for us as you’re watching so you see that this is something that’s easy to do especially when you have have the right tools and that’s why we wanted to start the hour off with the 10 in because I think this is going to be the most used Skillet the perfect size whether you’re cooking for one person or two people or five or a house builded this is going to be that one that you reach for all the time and you’ll notice how much food you can get in but if you’re just cooking one steak or just cooking a little bit you can do that as well o it looks it looks good I’m going to taste the steak go for it okay and again I’m going to clean it up good is it good M you can steal a vegetable from here if you want balance balance meal I love it I will I’m going to take I’m going to take mus we’re all set here clean and dinner for at least what would you say this would be at least for 68 people usually right and okay when you’re done with dinner you don’t have a mou mountain of dishes to wash you’re not soaking your pots and pans because it’s nonstick so no worries and here I have some pork chops and I’m just going to put a little bit of oil I don’t put it in the pan I usually put it on there and even the salt I don’t put in right away I put it at the end oh okay some nice pork uh pork it’s part of the pork easy and people love it and now pork is really really good and delicious so we have that I’m going to put some garlic cloves just to give it a little bit of flavor around a little bit of Rosemary here and we are set so that’s going yes and you’ve got the spatula remember in this utensil set you’re going to get the spatula the ladle the skimmer and the tongs you’re getting four pieces there if you want the lemon we’ve got those if you want the PO Perry we’ve got that as well we are going to past pasta now you know so I want to show you here I’m cooking my pasta but to make things kind of easier for you and Balan meal you know I’m all about balancing yes vegetables you can cook your P your veeg your vegetables with your pasta very common in Italy thought about that yeah you can put string beans you can put look at this so you okay and I made some pesta some quick uh uh because everybody loves pesta and we’re just going to dress it up like that okay and that’s a skimmer that’s a nice big so you can listen I use and where did that one go I use this for everything in the kitchen for my vegetables for my pasta it is a must have and people write into me they they emails Lydia where can I get it what here it is here it is can get your own set it’s part of this four piece set you’re going to use all four of these all the time and that’s what I love about this so it’s nothing is extra um again the spatula the ladle the skimmer this is the skimmer this is the ladle the spatula and the uh tongs you’re getting all four of those and if you want the utensil holder you can ask about getting those as well those are your two uh print and color options and look at how beautiful look at how just again it’s the presentation of it but you you it’s you just toss it with this fish it out with that put it all in one pan have your pesto you can have any sauce you can have tomato sauce but you know pesto is we’re getting into spring into summer everybody loves pesto so little oh yeah little bit more absolutely I’m looking at the pasta has to smile at you and of course a little bit of okay take one of those and turn the the pork chops for me okay with the ladle I mean with the tongs with the tongs turn them around let’s see how you handle them I love this okay the pressure no no no you make it easy you’ll notice that these are easy to handle easy to hold on to I’m flipping the pork chops that Chef put in as we started this presentation this is the Rosemary there’s that garlic and then when I’m done I just pull the lever I pull the lever back and it locks them place exactly it locks in it locks in you have no no problem and of course the you can use for soup but you can use to serve it m you know oh yes look at this are these your pasta bowls these are my pasta bowls with my poppies we we have them in in stock like okay and we’ve got those bowls coming up as well so if you’re looking and you’re saying I want you have these induction burners and uh um now now when when when you have something like this and just a little bit what you do I’ll tell you what you do you take a little bit of the hot water and you just let it and it comes right off look at this oh you know if it were something else like here we can make a sauce okay but this is it you put it out in the and you wipe it dry and it’s done okay so you see again everything is made to be easier for you in the kitchen so you’re not fighting your tools and that’s the idea if you’re using inferior or old or or pieces or tools that maybe you know it’s time for you to replace maybe they were good when you first got them but it’s now time for you to replace this would be a beautiful uh set whether it’s the cast iron skillet or whether it’s the utensils that we’re sharing with you um a beautiful piece to replace them with a little salt a little salt little pepper okay and what’s so good about this so I have my asparagus which I’m going to do as a side dish let me just put this in the sink any tips for cooking asparagus because I can’t get it right you could do pasta just like this yeah and little pieces of asparagus halfway through when the pasta is cooked you can put the asparagus okay and what I’ll do here because I had them sort of these are just blanch and then a little bit of iced water so they stay nice and green okay okay but you know again Common Sense Simplicity make it easy for you okay and so I’m going to let them heat up a little bit with it yes just that and don’t forget if you are picking up the utensils that’s what you see Chef Lydia using right there if you also want the utensil holder that’s this as well what I love about it is not only are you going to to have plenty of room for the four utensils that you might be picking up you have plenty of room for any other utensils that you want to put in there as well so this is just going to be beautiful think about this on your counter in your kitchen this is so this is look can you see how nice the salt and this kind of coarse salt is very good I mean if you for pasta forever but also if you have grilled meat nice little pieces of salt that you can feel are very good and this is the pepper look at this I love coar ground pepper it’s one of my favorite things in the world because you really get the full flavor of pepper especially once it’s hit hits the hot meal or meat and you know the good part of it is that you have here if you want it fine you adjust it there’s a little there’s a little thing and you adjust it thin or or or coarser or whatever you’d like but look at this so I think I’m going to put on this a little bit of salt and this is capres everybody loves their capres yes yes okay and there’s the pepper all right and of course a little bit of oil of course okay and look there you go it’s nice you can put these on the on the table people love that and they can each put what the what whatever they like now here I have a dessert okay it’s it’s a uh a batter okay and here I have because it’s good also for spices I have cinnamon I have all spice I have clove all in here and there it is I I didn’t I wanted fine for this because let me just open it up okay okay and again you can adjust it on the bottom yeah um the way it’s working is you do add AAA batteries so you add your own batteries and um like I said you’re going to get one of these but if you want more than one because a lot of times we think coarse ground you think I think pepper but if you do have other seasonings that you want to designate each one for um you can get as many as you especially since they’re on sale and you know uh spices they’re best when they’re mil at the moment they lose uh the aroma as they they oxidize as they stay so buying whole spices they last longer with this and you can make any combination or anywh you want it for your desserts and for coffees and forever and of course a nice little uh uh pizza and I have my peperoncino now I like let me let me oh look at that H oh perfect perfect oh and this is the sauté pan this is the sauté pan and this is straight out of the oven it’s still warm just out of the oven it’s beautiful let me let me just pull it right out for you since you’re ooing and owing I couldn’t help myself but you saw the way the spice went on and it’s that Finishing Touch to every meal um and it just makes all the difference and when you think about having fresh spices a fresh spice can not come from a a a a can that was Mill a long time ago who knows how long it’s sat on the Shelf who knows how long you’ve had it in your kitchen when it’s freshly ground like this you will get all of the flavor and and it especially if you put it on hot food or on a hot cappuccino some cinnamon the heat of the cappuccino really brings it right up the aroma and so here is the pan again super clean already to go pep you like peperoncino yes I do I like spice I’m somebody who likes you know the more the better I like it too it’s it’s healthy for you yeah that’s right and I think we don’t really have fun with it we kind of stick to our salt and pepper but there’s so many spices out there that you can really incorporate into your cooking so you can see the diversity of these peppermills and you know when you go to a restaurant you see the Peppermill on the table all the time that’s the reason because fresh pepper tastes so much better uh pepper that you Mil before loses a lot if you put pepper in cooking a pepper is a seed it’s a seed and it’s wood and it has tannins and it’s bitter so if you put at the last minute you get the maximum and no bitterness this is like you know what it’s it’s the kind of thing we think about like with wine you know with the tannins and the flavors and things like that but it’s the same thing with everything that you eat what you’re looking at right there is this beautiful um carved design that you’ve got here these are just stunning so not only are they functional they are going to be beautiful and they can live on your table you don’t have to move them and put them back into the cabinet at the end of the meeting um yes Lydia’s kitchen we are in Lydia’s kitchen and I’m glad that you’re here I’m Tamara Hooks I’m your host Chef Lydia Bastianich is joining us and a lot of you are still shopping for some of the pieces that we started off with the 10-in cast iron um Skillet the utensils the utensil holder but we are going to move on to the piece that we shared at the beginning of the show and it’s a weekly deal drop so this price of $34.95 is half of what the price normally is on this 3Q lightweight cast iron sauté pan you’re going to get the lid I’m just going to step over here real quick you’re going to get the lid the 3Q enamel on the outside yes easy to clean two handles you can go in the oven uh tap open fire uh uh in uh induction it works all over even on the bril or outside boiling bring it out and finish it up so we’re doing some chicken picata here okay and get some nice color on the chicken you don’t want to overcook it but you do want to give it some color and right in here I’m going to just wipe it up a little bit and then make the sauce right away okay you can mix that for me if you want get one of those utensils okay okay and the utensils you can get on hsn.com as well look we’ve got onions and peppers in here that’s for a free Tata okay so here here is the base now I’m going to make the the sauce uh of little butter picata sauce and you know what I do I put lemon lemon slices I like the lemon slices it gives the flavor and of course a picata is a lemon sauce okay and we’re going to put some olives as well in there the this is the chinola olives the big olives wow little Capers yes okay and a little bit of white wine oh my gosh I feel like I’m in a restaurant right now this is okay and so this is the base of a picata sauce you can make whe you can make pork picata let me put all of this in let me put a little bit more of lemon juice okay in there as well okay and so the chicken you know I’m looking at it and the chicken is is it’s a nice thick piece it could use a little cooking so let’s put it back in there oops it’s a light Chicken no okay here we are okay we’ll put let this simmer away okay and of course I need some little salt mhm to get that going okay and the pepper I will put later on I’m going to put a little bit of stock okay just to get it cooking like that now you can see how you can make pork chops like this yes you can make whe you can make uh and you know I I I like this this this little kind of caramelization on do you like that I do too yeah okay so let’s see the next thing here okay and I like that you and there’s a lid because a lot of times you don’t see the lid but it’s a glass lead it’s reinforced this is so it’s it’s built so that the heat doesn’t permeate so you can see I can pick it up no problem yes and you can see inside oven safe okay so this I have the sausages going the peppers pepperoncino you like spicy stuff this I’m going to put the go ahead you can put this is kale okay and this is going in in here okay yeah you can that’s it okay okay so you get again you know it’s okay I’ll collect after you okay okay so this is the one partt meal that I tell you about okay we can put a little bit of wine just to give it a little bit of liquidity M so it could steam up I would like to put let’s see where’s the salt a little bit of salt now pepper we don’t need pepper in there because we have the pepperoncino right right okay so that’s that okay let’s so the the the um lid is very important because like let’s say you have greens and things like that this will steam in its own rather than when you want the sauce to densen then you uncover it mhm okay okay and then when you want the steam then you’ve got the lid and that’s again one of the the differences that you see with this sauté pan and nonstick again so no worries about that so a nice uh uh frata in the oven easy you know you’re can make the frittata we made one on qu but here I have a frittata that I’m going to sort of combine here and then put in the oven I have leftover bread egg the usual egg salt and pepper in there and of course the onions the peppers you can put whatever vegetables you have or you like and this will come out like a cake ah oh okay okay and then you just pour that in is that going in the oven you said yes I’m going to let it get a a a a base kind of uh um form let’s see let me pick this up okay it’s going to form a base but you have to be careful not two and then I’m going to put kind of just doops of ricotta oh just like that wow you know uh cheese you can put cheese you can put but I think just D of liot like that is such a okay and now wow and then that’s the just like that oven safe up to 500° including the lid if you wanted to put the lid in there too you could do that you never hear that but you can do that with the pieces that you’re seeing from Lydia’s kitchen wow look at this yes okay so this is coming along oh look at the sausage and peppers and kale and you have the kale right in so you have the whole okay and this is a lot of food if you were um cooking for either some very hungry people or or a number of people you can get a lot in here three quarts is what it holds on to you well yes you can uh it it holds three quart but you can bake a fuka a frittata you can do the vegetable this is a full meal yes and this is an extra yes so let’s let’s get this frata that just came out of the oven yes so we made one a little bit earlier it’s the magic of Television yes and look at this and it comes right out nothing sticks nothing’s Left Behind nothing I’m going to clean it up and there’s another fuka that you made you know yes this like we did before yes with tomatoes and peppers that’s the way look at this this is perfect isn’t this beauti you can do also when you have a brunch you know you have a brunch yes you can do one or two and different this one I put bread and ricotta but you can put vegetables in there so you can you know just make make your whatever and this again I’m such a clean cook what can I tell you and look again no soaking all of the the pots are are finished at the same time that you finish your meal I’m going to walk around here just so that you can see um all of the colors that you have a chance to get so we’ve got them in Black we have the cobalt blue and we have them in red as well if you already picked up the uh 10-in Skillet and you want to match either the the red or the black that you got there you could easily do that um and I love that you’re going to get the lid and this lid one of the things that I always look for on a lid is when I’m wearing let’s say I have on an oven mitt that I can lift the lid and my Knuckles aren’t on the top of the the lid so you can see how much space you’ve got in there so whether it’s just your hands or if you do have an oven mitt you don’t have to worry about touching the top of that lid because you’ve got so much room right there says lyia kitchen right there on the top beautiful this lid is oven safe as well as the pan you’ve got 500 de nonstick on the inside enamel on the outside wipe it clean even heat everything that we love about cast iron and one thing we said earlier which we’ll say again is you don’t need to season these is is that correct you don’t need to season them they’re clean and the enamel is so easy first of all it it it looks beautiful on the table so this is one of those things that the Italian style family style you bring it in the pot on the table you don’t have to worry about it the one thing though when you bring hot stuff on the table always make sure that you have that people are aware that you put on the handle a towel so that they know that it’s hot but you can bring it nice and hot and you know what when you have a big group and they’re talking it keeps the food hot for a long time okay so here we have some you know what we have there o this is come on past It’s a pasta right no it’s not no tell me oh my God eggplant rtin oh wow everybody loves those I know somebody was watching and they’re saying Tam no it’s eggplant oh my gosh look at how good this looks let me get a fork I’m I’m I’m coming prepared you’re coming yes okay do you well you see this I could bring like this to the to the let me give you a little plate here where is a little plate I don’t want to a big plate you can see it’s still bubbling yes this is fantastic let me make some room for you okay use one of these okay and get go in the corner and get yourself uh whatever however much you think you’re going to eat okay I’ll just I’ll just get a little bit oh oh wow just take a little oh come on because I could eat the whole thing there we go and you see I would bring this like this to the table would you not yes that’s Beau just like that it stays nice and hot and let me put it on the on this beautiful table for you guys out there so you can see and enjoy that is delicious okay oh my gosh that’s good Wow Let’s let’s do the sausage in the kale look at this mhm you’re right it looks so beautiful on the table and it’s not going to stick again you can put the lid there if you want to depending on what it is you want to keep it hot while you and your family are talking and laughing and discussing absolutely no this stays hot just just put serving utensils and voila okay oh this is good look another reason you should get Chef Lydia’s utensils because again it’s about presentation it it and when you see the utensils it really is an extension of that you a lot of time people even at the table uh yeah you can put a fork and and a and a knife to a fork in a spoon but these are wonderful if you have a bowl of salad or something people can go in and and they look so beautiful they present and you can go in and serve yourself so these are the show what you’re noticing is that these are all the kinds of foods that we like to eat that we like to serve our family I love that you created this cookbook so that we can be inspired and look even signed it is I signed them all uh because I believe in really being connected and this is book you know uh uh my viewers I’ve been on PBS for 25 years so I’ve been uh we have Rapport out there with my viewers and I get uh all different questions and one of the questions was for my next book Lydia what are the favorite recipes you cook at home what does your family loves so here are the recipe my mother’s favorite recipe she lik chicken and potatoes my granddaughter she likes this scale salad actually that and of course this is the turkey meatballs with the pasta and I have some muscl and the chicken and the eggplant parm eggplant rollatini get it just for the egpl W there you go there you go so let me let me just make this salad and it’s simple it’s kale it’s avocado and you can see that the avocado is kind of it’s not in Italy we now we have avocado but it’s not h a traditional but my my granddaughter Olivia Olivia she loves it and you know what I do I make this the dressing with the egg yolk so I use the egg whites here M uh and some toasted pistachio M okay okay so let’s let’s do the and you made the dressing yeah it’s oil vinegar a mustard and the EG egg yolk cooked that’s it wow look at this and pistachios just like that and you just toss it with this you can put it on the table just like that and voila this is have and so we on some more muscles you know muscles I come from close to the Sea close to Venice and muscles are are a big I used to go and harvest them when I was small M so uh and that’s where the big pot like this comes in handy because muscles you know they get cool right away so you make it you have the you have the cover okay you leave the cover on you bring it to the table and you give them one of these one of the and let them help thems ooh look at this oh wow and is this a muscle soup or it’s it’s muscle stut onions olive oil and uh bay leaves okay okay I’m going to just pour it in because I want them to see look at this platter too smell it oh my gosh I can eat the whole pot oh my goodness it’s so good and that recipe is in the cookbook as well there you go look at that oh those are perfect aren’t they beautiful and again I’m cleaning this is done it’s clean yes clean clean clean clean and ready to go and ready to go again and look at this and that recipe is in the book you’ve got advertizers soups all these recipes are in the book let’s see little green fish and shellfish pasta palenta risotto meat poultry desserts and you know a lot of them are just what we talked about a one pot meal uh you know the sauce the meatballs you have to make in advance and I I I recommend also you make enough of it so you can have some for the next day or whatever and of course desserts and desserts also one of those quick desserts where you don’t bake you have some cookies or whatever the the the finger cookies and all that you crumble them up you marinate the strawberries with some balsamic vinegar in in there a little uh uh powdered sugar a little bit of the lior and you layer it with with the strawberries the juice the the cookies yes and then whipped cream and this is your dessert and these are in season I mean St it’s strawberry season right you know in the grocery stores right now you’re looking at pasta you’re looking at meatballs and the muscles we’ve got it all for you pick up Lydia’s from our table to yours signed cookbook and um kind of expand your own repertoire of what you’re going to be cooking for your family I always run out of ideas so um so thank you for that for sure yeah there’s about 120 recipes in there my go and it’s simple easy straightforward and then of course it’s time for coffee at the end of the meal we love coffee or actually anytime and what you have is um the stov top the water boils it goes up and the coffee goes in here and it permeates the coffee and then the pressure pours it right up here oh I think we have one going let’s see where is the I just started this one oh you just started that one that’s good so here so we have here the the grind uh this is espresso coffee which is toasted a bit more that’s the way Italians like it this is regular coffee this is the regular grind and that’s the espresso grind so the espresso grind is thinner is it finer yes yeah it’s and you just fill this little basket here and it’s simple and uh it’s as I said you know when you go to visit in Italy this goes right on now you know you can make that I have some nice scalded milk you can make a cappuccino out of it uh or you like it just as it is I like it just as it is I I put in some sugar many times I don’t I just like the flavor of it and if you like the flavor of your espresso and you want to be able to do it at home without always having to go out to the you know to the stores and have them make it for you now now you can make it so easily and this one’s full that one is full okay this one is where is the one you just made oh okay so this one is full good thanks okay thanks so she dessert oh wow afato it means um afato means when you almost sort of dunk somebody and you choke somebody this is ice cream aato hot coffee hot espresso over ice cream and it’s an afato dessert and it is one of the easiest and everybody loves it in Italy here you can if you want to if you want to go for your espresso maker please do it we also have the espresso cups as
