Tried to write out a recipe but its a bit messy and not 100% perfect 🙂
Recipe:
– 3-4 small potatoes – 1 large sweet potato – 500 grams of beef alternative (i used store brought but can also use soy curls or another alternative) – 1/2 tsp of minced garlic – little bit of onion powder – little bit of garlic powder – 2 cubes of beef broth – 2 tbs of tomato puree – 1-2 rosemary sprigs – 3 bay leaves – olive oil – 1 tbs of butter – 4 cups of water – 2 tbs of worcestershire sauce – 2-3 tsp of gravy powder (mixed in a little bit of cold water) – 2 tbs of flour
1. Dice potatoes and sweet potatoes (can peel if desired)
2. add minced garlic, oil, and a bit of onion powder. fry for a few seconds then add your beef alternative. cook until crispy and take off heat. when cool, add flour and toss to coat.
3. In a clean pan add some oil, butter, garlic powder and onion powder. Add tomato paste and let it cook for a minute or two. proceed to add rosemary, bay leaves, worcestershire sauce, gravy, potatoes, sweet potatoes and beef. Add water and stock cubes.

You know I’ve made soy curl everything, I’ve never thought of beef stew. Makes perfect sense.
