This is a 36" round raised bed bag, 12" high. I've got three New Mexico green chile plants, one poblano, and one Indian pepper of some sort (in the bigger pot). Can/should I fit them all in? The unidentified Indian pepper doesn't seem to tolerate the sun as well as the others so far.

Quick maffs 36″ diameter and 12″ height is ~53 gallons? You could fit all of them in there, although I would be tempted to just do 4 so the sun-intolerant one can be moved independently.
I wouldn’t do more than 4. Fwiw I got a free 100 gallon horse trough that the bottom rusted out of and one year it just had a single thai pepper plant. By the end of the season it was enormous and putting out 20-40 ripe peppers a day.

I have 100gal bags and I put 4 in each of them
4, and plant some companion herbs in the center. Plants some fringe flowering stuff on the outside to attract more pollinators.
I know a bunch of old school people are going to say I’m wack, but I stay away from having plants share one container. This prevents all of the roots fighting for space/tangling with each other.
Also, different breeds of plants have different needs. Some are more nutrient picky than others, some like more water than others, etc. hard to do all that when sharing the same medium space
