Confit octopus, slowly poached then finished under the broiler and marinated spicy fresh water shrimp, they kinda have more of a lobstery texture. The shrimp are so good under the broiler and it added a nice char and crisp to the octopus.
PREPARATION
Octopus beak removed, experimenting by marinating the Octopus in Italian dressing overnight, put into a Dutch oven and topped with olive oil, adding garlic, onion and seasoning. Shrimp peeled and marinated in pimento, garlic, soy sauce and lemon juice.
COOK
Octopus into the oven at 350f for about 2 hours and until tender, removed to drip dry and on a sizzle platter the under the broiler. Shrimps Pat dry and put into a lightly oiled pan and done hot and fast up under the broiler.
