Chopped Mediterranean Snacking Salad

Ingredients Mediterranean Snacking Salad
1 can chickpeas – rinse and drain
1 cup English cucumber – diced small
1 cup cherry tomatoes – halved or quartered
1/2 cup artichokes – drained and quartered
1/2 cup red onion – diced small
1/2 cup Kalamata olives – finely diced
2 tablespoons Italian parsley – roughly chopped
2 tablespoons dill – roughly chopped
1/3 cup Feta cheese – crumbled
Healthy pinch kosher salt – to taste
Few turns of cracked black pepper – to taste
Lemon Dijon Vinaigrette
1/4 cup extra virgin olive oil
1 tablespoon lemon juice – fresh squeezed
1 tablespoon white wine vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
1.5 teaspoon dried oregano
Pinch kosher salt – to taste
Few turns cracked black pepper – to taste
Directions
Prep all the vegetables according to the information above. Add everything to a large mixing bowl and gently toss it with the homemade lemon Dijon vinaigrette. Serve and enjoy! If you want to make this ahead, be sure to combine everything except the cheese. The dressing will soak into the vegetables so you can even make extra dressing if you like. Add the cheese right before serving.
