This ideal risotto is packed with flavour (recipe below) and is the perfect dish for any day of the week.
Risotto is the name given to a dish that uses rice as the main component, which is cooked in broth to a creamy consistency and served as first dish in a traditional Italian lunch or dinner.
Recipe
5 cups chicken stock (1250ml)
1 chicken breast (400g)
2 tbsp olive oil
250 g button mushrooms, quartered
2 tsp crushed garlic
¼ tsp nutmeg
½ tsp ground black pepper
1 tsp salt
20 g butter
1 small onion, finely chopped (150g)
1 cup white wine (250ml)
1¾ cups Arborio rice (360g)
¼ cup fresh cream (60g)
½ cup finely chopped parsley
½ cup grated Parmesan cheese (50g)
Method
Pour oil in a pan over medium heat and braise the chicken strips while occasionally stirring. Add mushrooms and cook for further 5 minutes. Add garlic, salt, pepper and nutmeg and mix. Cover with a lid and cook for 10 minutes and put aside.
Add butter and onion to a pot over medium heat. Add rice and cook while stirring for 2 minutes. Add white wine and cook while stirring until absorbed. Add chicken stock a little at a time and cook until absorbed before adding more stock. Repeat until all stock is used. Add the chicken and mushrooms. Add cream and cook while stirring until evenly cooked through. Serve in a bowl garnished with Parmesan and parsley
Note: Sour cream or yogurt can be used instead of fresh cream.
