Chicken Halloumi Salad

    # INGREDIENTS 

    * 2 chicken breasts, skinless and boneless
    * 8.8 oz halloumi cheese
    * 1 tablespoon oregano
    * 1 tablespoon olive oil
    * 1 cup grape or cherry tomatoes, halved
    * 1 avocado, cut into slices
    * 1 cup lettuce

    # Dressing

    * 2 cloves garlic, minced
    * 2 tablespoons lime juice
    * 2 tablespoons olive oil
    * ½ teaspoon salt
    * ½ teaspoon black pepper

    # INSTRUCTIONS 

    * Slice the chicken breasts into ½ inch strips and place in a medium mixing bowl. Add the oregano, salt, pepper and olive oil and toss the chicken strips to coat.
    * Preheat a grill or grill pan over medium-high heat, lightly oil the grill or grill pan and grill the halloumi slices for 1-2 minutes per side, until golden brown grill marks form. Set aside.
    * Place the chicken strips on the grill and cook until golden on both sides and the chicken is cooked through.
    * In a large bowl, toss together the mixed salad greens, avocado and cherry tomatoes. Arrange the grilled chicken slices and grilled halloumi on top of the salad greens.
    * Mix the salad dressing in a small bowl and whisk to combine. Drizzle over the salad.
    * Serve immediately and enjoy your delicious chicken halloumi salad!
