So i started a tonkotsu pork broth this weekend. I have about 8.8 kilos of bones and trotters in the soup. I was attempting a longer extraction/cook time method ~18 hours. Last night I had topped off my broth to level where I had approximately 16-17 liters of water in it before putting the lid on with just an small opening. I had it on for about 6-9 hours at this point checking it periodically and I thought I had a good evaporation rate that would have it stay at a safe level after sleeping for about 7 hours. This morning when I checked on it, I had likely only 4 liters of water and it was no longer white but brown instead. I measured the brix level and I was at about 30% I readded water but it appeared it wasn't emulisfied any longer so i am going to let it go again. When I checked after adding the water I wad at a 4%.
My question is whether I ruined this batch or will it just be an asthetic failure?
