What are the holes and so on used for? Thank you guys!

To keep food warm/resting. Not sure what all the holes purpose are.

I have the Phantom 500 with this rack. First, you installed yours upside down lol. But the front slots are for hanging drumsticks, the larger holes are for jalapeno poppers, the smaller ones are for things like stuffed mushroom caps or roasting small tomatoes, and the wave slots are for delicate fish, baked potatoes, etc. Or the whole thing works fine as a “regular” warming rack to keep whatever you grilled warm too (if you don’t need the specialty uses on a particular cook).

More importantly what is that thing over the grill grating? Sacrilege! That’s not grilling.

What’s with that silly grill mat? It serves no purpose.
I have something like that on my grill. It’s for burning the top of your hand when you reach for something in the back.
More importantly, what the hell are you cooking?
Why are you cooking on a plastic sheet
