Crispy Peking Duck

Who knew it was this easy to make crispy duck at home?!

Ingredients:

For the Peking duck:

– 1 duck
– 1 large pot of water
– β…” cup rice vinegar
– 1 cinnamon stick
– 1 tbsp sea salt
– 4 whole cloves
– 2 tbsp fennel seed
– 1 tbsp Szechuan peppercorns
– 1-2 tsp star anise

For the glaze:

– 1 cup hot water
– 3 tbsp rice vinegar

  2. I live about 10 minutes from the heart of Chinatown in NYC. One of my favorite things in life is a Chinese duck with pancakes. One place preps them out front and Scrum is right on in his procedures. These things are lacquered when they roll them into the oven. This place ties off the neck
    and blows them up more. So fun to imagine doing one at home. I know better. Beautiful video Scrum.

    Can I learn the temperature of your kitchen during this drying?
    I can't imagine leaving chicken on the counter overnight and assuming it's still edible, but depends on how cold your kitchen is I assume? πŸ₯ΆπŸ₯ΆπŸ₯Ά
    But I don't think my kitchen s ambiance is cold enough…😞

  5. 😱 not how it’s eaten in Asia …. the crispy skin is sliced off the body in roughly 2×4” wafers, placed onto 5-6” thin pancake wraps with (correct garnishing) – rolled up & delicately eaten.
    The meat of the duck is separately stir-fried with noodles, or rice, or w/vegetables or on it’s own with simple garlic/onions & chillies.
    This huge wrap is too much duck – takes away the enjoyment of savouring a strong game.

  6. This stayed unrefrigerated for at least 8 hours. I don't think it's safe. Also, what was in the oven to catch drippings? Did the grease fly all over the oven?

  9. So you leave parboiled duck out overnight with a fan blowing on it? You have some really great recipes, but this one has Salmonella written all over it.
