Hello! I recently made the Chicken with Maple Dijon Sauce and Sweet Potato, Zucchini, and Red Onion Jumble – it was delicious! The sauce was made of maple syrup, dijon mustard, and something called a Vidalia Onion Paste – what can I use in place of that? I could definitely try just very finely mincing onion, or frozen onion cubes maybe? Anyone have success recreating it or thoughts? I also think a shopped up shallot sauteed in butter could be an easier twist on it.

    I’ve never heard of that, but I used to be an extremely picky eater and would only eat onion powder OR make an onion paste to avoid the texture. I would just put onion into a blender and purée it, then add it into curries or sauces. Try that!

    Instead of Vidalia Onion Paste, try caramelizing finely minced onions for depth. Frozen onion cubes can also work well. Shallots sautéed in butter offer a rich alternative. Experiment to find your preferred twist!
