To get started, peel and dice 7 potatoes and throw them in a pot of cold water with salt.
Bring potatoes to a boil covering the pot with a lid. Set the heat to medium to low and let the potatoes simmer for seven to eight minutes.
In a separate saucepan, add one and a half cups of heavy cream, a teaspoon of nutmeg, two bay leaves, crushed garlic cloves, and salt and pepper. After letting the mix boil, strain it and put it back in the pot with the heat off.
Drain potatoes and put them back into a pot and steam them for two minutes.
Put them through a ricer.
Fold in the cream in thirds.
Fold in 1/4 cup of cubed and chilled butter.
Top with virgin olive oil and parsley or chives.
