Auntie Saniye is sharing the recipe for a rare but a super delicious liver wrap that you can hardly find anywhere else. It’s a beautiful way to cook liver and it comes out super tasty. We hope you enjoy it!
INGREDIENTS:
Half a kg of finely chopped liver
Caul fat
4 cups of water
3 cups of rice
2 tablespoons of olive oil
1 egg’s yolk
5 green peppers OR 1 green bell pepper
1 tomato
1,5 tablespoons of butter
1 tablespoon of black pepper
1 onion
30g of dill
40g of peanuts
1 paprika
1 teaspoon of salt but you can use less or more
1 teaspoon of oregano

[Music] welcome to ati’s recipes our menu today is liver wrapped in Cal fat here are the ingredients half of a kilogram of finely chopped liver cold fat four cups of water 3 cups of rice 2 tablespoons of olive oil one eggs yolk five green peppers or one green bell pepper one tomato 1 and 1/2 tblsp of butter 1 tbspoon of black pepper one onion 30 gam of Dill 40 gam of peanuts one paprika one teaspoon of oregano one teaspoon of salt but you can use less or more this is co fat it’s the best ingredient to make this dish you can not really replace it with anything else I am adding 1 and 1/2 tblspoon of butter to a pan I am also adding a tablespoon of olive oil the reason why I am adding olive oil is to prevent the butter from burning the butter has melted let’s add the onion now I will stir it a bit I am also sprinkling half of the salt if you would like you can add dried black currants at this point I didn’t add it this time but you can if you prefer I added the peanuts now let’s sauté them a bit you can also add almonds but I prefer to cook this dish without it you can add or remove other ingredients if you’d like let’s add the uncooked rice now I am pouring 3 and 1/2 cups of warm water I added a teaspoon of black pepper too it will cook until the rice absorbs the water I am putting the lid on and leaving it to [Music] boil got let’s add the remaining half a cup of water as well I added four cups of water to three cups of rice the rice has cooked now it’s time to let it steep in the meantime I am moving on to cooking the liver and I need another pan for it I am adding a tablespoon of olive oil and a tablespoon of butter to it let’s let these heat up and melt a bit I am adding the green peppers and the [Music] paprikas I will sauté these first and then I will add the liver okay it’s time to add the [Music] liver as you can see the liver has released this water I will let it simmer until the water evaporates it’s on high Heat at this point okay the water has evaporated you can only see the butter and oil at the [Music] bottom I am adding the black pepper now it’s a dessert spoon of it liver tastes great with a generous amount of black pepper I am now adding the oregano I am adding the chopped tomato now let’s put the lid on after adding the tomatoes the rice has cooked and rested the liver is also ready let’s mix these two now I am pouring the liver saute on the rice I am also adding the chopped Dill to this mix let’s blend them nicely it lacks salt so I will sprinkle some more The Filling is ready now you need a soup bowl like this one I cut the coal fat in pieces like these I am placing the center of cool fat at the bottom of a bowl I am now filling it with the rice and liver mix let’s now close and wrap it [Music] I am now placing the wrapped liver on a baking tray I am repeating this process I am now brushing the wraps with a beaten egg yolk in a preheated oven it will bake at 200° C until until their top turns golden brown our dish is ready now and it has turned out delicious enjoy [Music]
