My husband made homemade salsa this morning so I had to come up with something that I could use it in for lunch. I baked two corn tortillas, no oil, in the oven until they were firm. I had to throw away my first batch because I burned them (so if you do make them keep an eye on them). Topped with fat free refried beans, fat free cheddar cheese, a tiny pinch of avocado, Fage fat free Greek yogurt, shredded lettuce, salsa, sliced olives, shredded lettuce and Cholula. 342 calories, 25 grams of protein, about 10 grams of fiber, 5 grams of fat. The crunch of the tortillas was perfect, it was extremely messy, but so good. I have celiac disease so I can’t have Taco Bell (and I probably shouldn’t anyway), but it felt so close to eating Taco Bell.
