when you think of Vietnamese food what’s the first thing that comes to mind beefa but it’s not just any beefer it’s my mom’s filet mignon beef here’s how to make it the most important thing you need to do is clean the meat to get rid of any gamey flavor so we’re going to rub this beef brisket with salt and clean it with vinegar rinse off the salt and vinegar and do the same for your oxtail next we’re going to boil the brisket and oxtail in water to clean off any scum and blood after about 20 to 30 minutes drain it and it should look something like this to make the broth try some onions and ginger root and place them inside of a large pot of water to it we’re going to add five to seven pieces of rock sugar and four ladles of your favorite fish sauce add a pinch of salt and mushroom bouillon and place your meat back into the pot toast up some cinnamon star anise fennel cloves cardamom and coriander seeds place them in a spice ball and put it into your broth this will take about two and a half hours to cook so prepare your garnish and noodles during that time for the filet mignon cut off all the silver skin and clean it with salt and vinegar when the meat and the broth is fully cooked take everything out and adjust the taste to your liking by adding more sugar salt and fish sauce throw in some meatballs cut up your brisket and it’s ready to serve you can store the pho in the freezer the next time you’re craving it
