now let’s make an incredible lemon risotto and you may just be surprised on how easy this is to make and I’ll be real with you I absolutely love lemon I’ll try to sneak it into any dish I can but I think it goes really well here the lemon helps brighten things up as a lot of rotos can be heavy I often pair this with some seared chicken scallops or vegetables it’s really determined by what I have in the fridge that night and I hear you guys you don’t want to do a huge grocery store one for just one dinner and that’s really where this risoto shines now if I can recommend one thing for this recipe it’s to bring a friend the hardest about risotto is you have to sit there for 25 minutes and stir to make sure this thing doesn’t burn and for any of you out there who may be vegetarian or vegan don’t worry this recipe is super easy to accommodate all you got to do is change out that chicken stock for vegetable stock and then remove the butter and cheese and you’re all good to go I promise you it’s still going to be delicious so
