Hi, long time barista here. I run a small coffee shop just me and was wondering about shot weight vs the run time.
Let me preffice that my coffee tastes great.
My supplier states that my yield from 21gm should run between 27sec – 32sec which it does.
Although they also say that it should yield 38gm of espresso which it does not.
I checked this morning and a 30sec shot yielded 50gm of espresso.
Should I be worrying about this as a barista even though the coffee tastes good and if so how can I change the yield of espresso?
Also the ratio is 1:1.8
