Amazing work. Broth is a little thinner than I like for a tsukemen but the flavour is stellar. Not afraid to up the anchovy, miso is a creamy second fiddle and with a nice blob of ginger it’s one of my favourite soups in town.
Chashu is stellar too. Cooked soft and fatty but not with the bacon-y edge too many places out on it. Tastes of rich pork and happiness.
Honest to god I am so happy right now.
