This easy cod bake is a simple fish dish, bursting with flavours of coriander, lime, garlic and chilli. It’s all made in one pan and baked in the oven.

Brilliant for a quick, hands-off dinner. It works great with any chunky white fish and salmon too!

Ingredients:
▢4 skinless cod fillets – (about 600g or 1.3lbs altogether)
▢¼ tsp salt
▢¼ tsp black pepper
▢¼ tsp ground coriander
▢¼ tsp smoked paprika
▢1 tsp mixed black and white sesame seeds
▢½ tsp chilli flakes
▢1 lime – sliced
▢2 tbsp olive oil
Coriander Lime Paste:
▢50 g (1 ¼ packed cups) fresh coriander (cilantro) – roughly torn or chopped
▢3 cloves minced garlic
▢1 tbsp olive oil
▢Juice of 1 lime – (about 2 tbsp)
To Serve:
▢Small bunch of fresh coriander (cilantro)

INSTRUCTIONS:
1. Preheat the oven to 220C/425f

2. Place the cod fillets in a baking dish.

3. Mix together the salt, pepper, ground coriander, paprika, sesame seeds and chilli flakes and put to one side. This is your dry mixture.

4. Make the coriander lime paste by placing the coriander, garlic, olive oil and lime juice in a mini food processor and pulse until fairly finely chopped. Alternatively, you can finely chop the coriander, and mix it with the other sauce ingredients.

5. Spread the coriander lime paste on and around the cod fillets.

6. Sprinkle the dry mixture over the cod fillets.

7. Arrange slices of lime around the cod.

8. Drizzle on the remaining 2 tbsp of olive oil.

9. Place in the oven for 14-16 minutes, until the cod is golden and cooked through.

10. Serve topped with fresh coriander.

i love the flavors of this dish we’ve got some nice tender cod but it’s the topping that really gives this dish a delicious fresh lift and it’s all ready in under 25 minutes [Music] hi i’m nikki welcome back to our kitchen where we show you how to make delicious family-friendly recipes now we’re trying to get more fish into our diet at home and you guys know that we love our quick and easy meals so this cod bake is a real winner so let’s get cooking we’re going to start by preheating the oven to 220c or 425f and now for the cod fillets i’ve got four chunky cod fillets here for my family of four but you can scale this recipe up or down depending on how many you’re serving you can also replace the fish if you prefer a different fish so pollock haddock or even salmon works really well whatever you do though if you go for a different fish just try to make sure it’s quite a thick fillet place the cod fillets in an oven proof pan or baking dish and now we’re going to make that lovely fresh topping for the card so we’re going to be using lots of lovely fresh coriander some garlic lime juice and spices we’re going to start by mixing together the dry mix in a bowl add quarter of a teaspoon each of salt black pepper ground coriander and smoked paprika we’re also going to add in a teaspoon of mixed black and white sesame seeds and half a teaspoon of chili flakes mix it together and then put it to one side so that’s the dry mix done now we’re going to make the coriander lime paste so i’ve got 50 grams which is a little under 2 ounces of fresh coriander here and i’m going to add it to a mini chopper if you haven’t got a mini chopper then you can just chop it really finely by hand and add it into a bowl that’ll work fine too we’re also going to add three cloves of minced garlic one tablespoon of olive oil and the juice of a lime pulse in the food processor until roughly chopped and combined once the paste ingredients are combined we’re going to spread it on and around the cod fillets [Music] [Music] now sprinkle the dry mixture over the cod fillets arrange some slices of lime around the cod for a bit of extra freshness and then we’re going to drizzle on about two tablespoons of olive oil and now we’re going to place that in the oven to cook for about 15 or 16 minutes until golden and cooked through perfectly i really wish you could smell those lovely fresh flavors in here [Music] once it’s cooked through plate it up with some rice and some extra fresh coriander just look at how lovely and soft and tender that cod is and that coriander lime sauce is packed full of flavour and it works so well with fish i know it’s going to go down really well with the family and i’d love to know what’s your favorite fish dish let me know in the comments below see you next time

  3. Looks lovely, definitely worth trying. I think I'd mix a bit extra of the dry ingredients and use it to marinate the fish first though, for a bit more flavour.

  10. I can’t seem to find the video a while back where you were asking for suggestions of recipes you should make. But I really think you should do empanadas! The recipe I use is so fussy and doesn’t work well I’m sure you could make something much better.
