This is one of our favorite easy Keto Dinner recipes! I wasn’t sure if my kids would like it…but they LOVED it! This recipe is super basic, easy to make, flavorful and the leftovers taste fantastic too. Try this for your next Ketogenic dinner!

Recipe:
1 lb Chicken Breast, cooked and diced or shredded
4 C Broccoli or Cauliflower (raw)
3/4 C Mayo
3/4 C Sour Cream
1/2 Tablespoon Lemon Juice
2 teaspoons Curry Powder
1 C Shredded Cheese
1/2 C Shredded Cheese for the top

Mix all ingredients except the broccoli and chicken together. Mix in broccoli and chicken. Place in 8×8 pan and spread last 1/2 C cheese on top. Bake at 350 for 40 minutes.

chicken broccoli curry casserole is one of our favorite dinners start by adding in three quarters cup of sour cream then add in three quarters cup of avocado mayo we grab the sir kensingtons from costco we love the taste and it’s keto friendly then add in half a tablespoon of lemon [Music] juice [Music] after the lemon juice you’ll add in your curry powder this has a mild flavor with just two teaspoons if you want a little bit stronger then you can add in a little bit more curry powder then go ahead and mix everything together we mix it in a very large bowl because you’re gonna put in the rest of your ingredients in here one cup of shredded cheddar cheese and then you’re gonna mix that in as well you did save a half a cup to the side of that cheddar cheese now you’re gonna go ahead and add in four cups of broccoli and or cauliflower whatever you have um it all tastes delicious and then we instant pot and shred our chicken so we’ve got a pound of shredded chicken that we’re gonna add in here as well once you’ve got that all mixed in that’s why we’re using a big bowl mix it all together with the cheesy creamy sauce it’s absolutely delicious once you get that mixed together you’re going to dump it into an 8×8 pyrex a glass pyrex that you’ll be able to cook in the oven and that’s going to soften the broccoli we did not pre-cook the broccoli or the cauliflower so put it in that pyrex and then you’re going to put it on the extra half cup of cheddar cheese or colby cheese on top and then once you’ve got that on there you’re going to put it in the oven you want to preheat the oven [Music] and you’ll bake it at 350 degrees for 40 to 45 minutes make sure you check that the broccoli is soft enough and it’s delicious
