Are these shellfish safe to eat raw?

    I see many Instagram videos where chefs just shuck the shellfish while it’s still alive. Obviously I’ve had clams and oysters in the States before, freshly shucked. What are the food guidelines here?

    You have to be good at cleaning and process it

    It’s very simple , just make sure there’s no worm or eggs

  5. Depends where and when harvested. If it’s monitored waters for vibrio, sewage and biotoxin, then fine, otherwise you’re rolling the dice.

    Edit: Although, “surf” clams are often dredged from the sea bottom, so if they’re not dead, probably ok.
