Ingredients in Instant Pot

2 peeled and cubed Jicama
1/2 stick butter in the water while pressure cooking
1 tsp salt
Pressure cook in high for 1 Hr

Ingredients in blender

strained Jicima
2 Tbs butter
1 Tsp salt
1/2 cup milk

think about your your turkey and your gravy on thanksgiving day and you want to dip it in your mashed potatoes but you look at your mashed cauliflower and yeah this is it this is the potato you have been dreaming about hello welcome to my keto kitchen i’m victoria and today we are going to make some mashed potato i mean mashed jicama i mean we all love mashed potatoes i’ve never heard one person say that they do not love mashed potatoes but on keto we all know that we can’t have those and that’s not fair so what i’m going to do today is i’m going to use the instant pot and we are going to make mashed jicama now first thing i have to do is i have to go peel this i’m going to use a potato peel i’m going to peel this cut it into little squares and then i’m going to put it into the bowl of my instant pot this is what i’ve cubed up and we top it with water just enough water to cover the jicama okay and the last step is we’re going to put the last two steps we’re going to put four tablespoons of butter in here with the jicama and one teaspoon of salt i’m going to put this in the instant pot for one hour on high and then we’ll come back and see what it looks like okay it has been one hour that i left the jicama on high in the instant pot on pressure cook they’re done i let the instant pot natural release so here’s what’s next i’m going to put two tablespoons of butter in the blender next i’m going to pour all the jicama in here i almost forgot to mention that i strained all of the water from the jicama almost too much okay next i’m going to pour half of a cup of milk in the mixer in the blender i get those two mixed up one teaspoon of salt i’m gonna pop the top and let’s see how well it blends up i’m going to push puree it’s getting a little stuck so i’m going to help it out [Music] wow this looks exactly like mashed potatoes taste test time okay i’m a bit nervous because jicama is not a potato it is a root vegetable but i’ve tried the cauliflower so i’m going to compare this taste to two things i’m gonna compare it to regular potatoes number two i’m going to compare it to mashed cauliflower so we’ve got mashed potatoes mashed cauliflower and mash jicama i’m gonna tell you my opinion and i’m slightly nervous oh that is not cauliflower okay yeah this tastes like okay there’s a difference between this and a mashed potato this um exact same texture okay think of a potato nice and creamy and smooth okay and you know when you taste the mashed cauliflower there’s like this kind of strange aftertaste it’s a little unpleasant that is not at all in this i think i have the chills i’m way too obsessive over keto stuff this tastes like mashed potatoes it has a mashed potato taste it has a deeper it has a slightly deeper taste that it this is the exact ratio you need two tablespoons of butter half of a cup of milk and one teaspoon of salt that is it that is like i mean that is perfect so if you want me to do thanksgiving and christmas videos using jicamo give me a thumbs up i would love a thumbs up please subscribe to my channel i would love to have you here weekly and have a blessed day

  7. I like jicama, but never thought to use them as a potato substitute. I have heard of using radishes cut up, cooked, and used in "potato" salad, but haven't yet tried that. Now I think maybe the jicama would be a good sub for potatoes in that dish.

  17. O my gosh. I tried this recipe the first time I saw it because, well you know, I love mashed potatoes. To date, I've lost 40 lbs on Keto and have had to give up potatoes. I have got to say, I am so excited for this new keto addiction to my meals. Soooo delicious. The texture is amazing as well. I had just two additions, canned cream instead of milk because of the carb count and a mashed potato flavoring from One On One Flavorings that has no carbs or calories. AMAZING. Thank you Victoria.

  19. I only used 1 large jicama I just boil it for until tender I used 2 tbsp butter salt 1/4 strain let it cool off I used regular blender I put the jicama 2 tbsp butter & puree.salt & pepper to taste its taste like mashed potato.👍thank you for the idea.I pray for your success .
