So much flavor you want to eat this pancake plain. I kept eating them right off the griddle because they’re so good with nothing on them! Two lemons worth of zest and 1/4 cup of juice bring tons of citrus flavor to this special Mother’s Day breakfast. These gluten-free Tart and Tangy Lemon Blueberry Pancakes are wonderful as is but you can ramp it up with some berry syrup too. My usual pancake topping is a slather of butter and healthy sprinkle of sugar on top. “Donut” style if you will. These have way more flavor than the usual pancake and but are still moist, tender and buttery. You need to try these!

I put more lemon than I’ve ever put in a pancake in these and they were so good plain also good with butter sugar and lots of berry syrup there’s no bad way to eat this tart lemony gluten-free pancake oh my gosh
