Noodles are bread flour with 42 hydration and wavy, fairly thick.
Soup is pork neckbones boiled for about 7 hours. Didn’t have time to go longer, still turned out white and thick.
Chashu is chashu. Very tender, but still easy to pick up.
After the chashu braising liquid cooled overnight (typical soy sauce, sake, mirin, ginger) I scraped the fat off the top. I melted it down, seasoned with garlic and green onion, strained fat while hot.
Eggs were marinated in the left over chashu liquid for 24 hours.
Day of eating took a cup of the chashu liquid into a pan, simmered at very low heat with niboshi for 10 minutes, then a handful of katsuoboshi for another 4, strained.
Ground equal amounts katsuoboshi and sea salt together.
**Putting it all together**
little less than one Tbls katsuoboshi salt, two Tbls seasoned chasu liquid into bowl.
Little less than one cup bowling pork broth into bowl.
While noodles finished cooking, heated up in eggs and chashu boiling broth.
