  1. Roasted Garlicky Tomatoes, Artichokes and Goat Cheese Appetizer with Garlic Rubbed Crostini
    Ingredients:
    8 oz cherry/grape tomatoes
    12 oz @centofinefoods artichoke hearts, drained
    2 garlic cloves, crushed or shredded
    1/2 tsp salt
    Black pepper
    1/2 tsp crushed red pepper
    3 tbs olive oil
    4 oz @vermontcreamery goat cheese
    A few springs of thyme
    2 tsp fresh parsley, chopped
    2 tsp fresh dill, chopped

    Garlic rubbed crostini
    1 Demi baguette
    2 tbs olive oil
    1/2 tsp salt
    Black paper
    1 garlic clove

    Method:
    1. Preheat oven to 450 F;
    2. Add tomatoes, artichokes, garlic, salt and olive oil to a skillet and mix; place goat cheese in the middle, drizzle olive oil on top and sprinkle crushed peppers; add thyme;
    3. Roast for about 25 mins and broil for 5 mins;
    4. To make the crostini- slice baguette, drizzle olive oil, season with salt and pepper and cook on a skillet until charred; then rub with a garlic clove;
    5. Once cooked, finish with fresh parsley, dill and black pepper; add to your crostini, along with the delicious juices and enjoy!
