Prepare a fabulous meal on a budget with this super easy, one-skillet garlic shrimp and quinoa recipe. It’s simple enough for a weeknight and fancy enough for company!

Ingredients:
6 Tbsp unsalted butter, divided
1 cup diced yellow onion
2 stalks celery, diced
3 cloves garlic, pressed
2 cups uncooked quinoa
4 cups low sodium chicken broth
1 tsp dried oregano
1 tsp dried thyme
1 tsp paprika
3 Tbsp tomato paste
1 tsp salt
1 lb raw tail-on shrimp, deveined
½ tsp garlic powder
½ tsp red pepper flakes (optional, but this is not much heat and adds great flavor)
salt and pepper to taste
½ lemon
fresh parsley for garnish
fresh lemon wedges for serving

Hi I’m Cheryl Najafi with Everyday Dishes and today we’re gonna do an easy one skillet shrimp and quinoa dish. [ Upbeat Music ] Place a large four to five quart sauce pan or skillet over medium heat and melt three table spoons of butter then add 1 cup of onion and two cups of chopped celery. Cook for three to four minutes until onion has began to soften. Add three cloves of pressed garlic and let it bloom in the pan for no longer than about 30 seconds you don’t want to over cook your garlic. Add two cups of uncooked quinoa and stir to combine everything. Cook for 1 minute toasting the quinoa then pour four cups of chicken broth into the pan. Bring the mixture to a boil, reduce heat to low then add one teaspoon of oregano, a teaspoon of thyme, a teaspoon of paprika three tablespoons of tomato paste and one teaspoon of salt. Stir to combine and then cover and let simmer for 15 minutes. After the quinoa has simmered for about 15 minutes remove the lid and stir add one pound of uncooked tail-on shrimp to the top of the quinoa. The shrimp will probably cover the entire top of the dish so you may have to nestle a few of them into the mixture, but trust me they’ll all fit. Replace the lid then allow the shrimp to simmer for about three to four minutes until they are cooked through they’ll turn nice and pink. Remove the lid and test the quinoa for doneness. Now, you’ll know the quinoa is done when it’s soft but it still pops in your mouth a bit when you eat it. Remove the skillet from the heat. Now stir in a half a teaspoon of garlic powder and a half a teaspoon of red pepper flakes into three tablespoons of melted butter. Drizzle the butter over the shrimp. Now spritz the quinoa and shrimp with half of a fresh lemon and garnish with fresh parsley and serve immediately. [ Upbeat Music ] This dish is so beautiful you can actually take the pan right to the table and because we’ve steamed the raw shrimp they are so delicate and flavorful.   1. I just made this tonight and it tasted amazing! The spices really wake up the quinoa and I pan seared my shrimp separately (with butter of course) and it was so delicious! 👍🏼😋

  2. Does it have to be brown quinoa ?… also What is the difference between each color of Quinoa ?

  3. I just tired quinoa for the first time today and loved it. It opened my eyes to a new world. I will go into my nearest whole foods and try your dish… it looks tasty…

  4. You need to soak and rinse quinoa…so sorry i disliked it…its important to remove lecithins by soaking and rinsing all seeds grains and legumes. Lecithins are bad for gut health…luckily quinoa has less than others.

  5. I tried this today. The quinoa was excellent. My shrimps were ok. Maybe they r best if marinated before or mixed in the quinoa

  6. The quinoa in the main picture is NOT the one that you made. The main picture is yellow & you made brown 😕
