First set of ribs on my new kj classic 1. Had done a few hot chicken thigh cooks. Planned to follow the SDBBQ plan of 2 hours at 300f, foil boat for 1 hour, sauce for another 5 min each side. Lit the coals and thought I'd multitask and take the dog for a walk before rugrat pickup. Came back to a roaring fire that need to be starved and resulted in billowing white smoke. Needed to wait for the temp to get back and fire to clean out. Ran an hour behind schedule all up and the temp ran at around 310-315. All in all happy with the results considering my stupidity. Flavour was good, smoke ring pretty prominent, lots of juice. Wasn't probing as soft in spots and the outside was a bit harder due to the higher temp I suspect. Lesson learnt that the only multitasking to be attempted while bbqing is to drink beers.
