I love making homemade soup and today we are making a CHEESY ASPARAGUS SOUP. This bright and refreshing soup combines harvested fresh asparagus with cheddar cheese and a hint of citrus. This soup is healthy. It is also an easy asparagus recipe that brings out the delicate flavors of fresh asparagus.

CHEESY ASPARAGUS SOUP
nonstick spray
olive oil, for coating pot
1 small onion, chopped
1 large clove garlic, minced
2 Tbsp all-purpose flour
2 Tbsp unsalted butter
2 – pounds fresh asparagus, ends trimmed & cut into 1 – inch pieces
2 cups low-sodium chicken (or vegetable) broth
1/2 tsp salt
1/8 tsp freshly ground black pepper
1/8 tsp cayenne pepper
1/2 tsp fresh thyme
2 – 2 1/2 cups milk
1 cup half-and-half
2 cups white cheddar cheese, shredded
2 Tbsp white wine
juice from half a lemon
fresh chives, cut to size, for garnish

1. In a large pot over medium heat, add olive oil. Stir in onion and cook until translucent, about 5 minutes. Add garlic; cook 1 minute. Add all-purpose flour and butter. Stir and scrape the bottom of the pot as butter melts and flour combines with vegetables. Add broth and asparagus. Whisk and bring to a boil. Reduce heat and simmer, uncovered, 10 minutes or until asparagus is tender. Remove from heat and completely cool, 30 – 40 minutes. Transfer mixture to a high-powered blender and process until smooth. Wipe out pot with a paper towel.
2. In the same pot, over medium heat, add salt, pepper, cayenne pepper and fresh thyme. Whisk while cooking, 1 minute. Stir in milk and half-and-half. Bring to a low boil. Reduce heat to simmer and add cheese. Whisk until cheese melts. Stir in wine and lemon juice. The soup will begin to curdle. Stir and bring to a low boil. Allow soup to reduce to desired consistency. Remove from heat and serve warm. Garnish with fresh chives.
