One of my favorite Italian treats is stuffed squash blossoms. I didn’t have all of the ingredients I needed to stuff the blossoms, so I just battered and fried them.

Ingredients:
Squash Blossoms 2-3 per person
1/4 cup corn meal
1/4 cup all purpose flour
1 Tbsp corn starch
1/4 buttermilk
1 egg
Splash of club soda
1/4 oil for frying
Favorite seasonings to taste

Steps:
1️⃣ Harvest blossoms early morning
2️⃣ Remove the anther or stigma
3️⃣ Wash and let air dry
4️⃣ In a shallow pan or bowl mix dry ingredients together. Add your favorite seasoning to your liking. I use a no-salt seasoning.
5️⃣ In a separate bowl mix egg, milk and club soda together
6️⃣ Dip each blossom in the egg mixture then dredge with the cornmeal mixture.
7️⃣ Heat oil in a frying pan. Fry blossoms until golden on each side
8️⃣ Enjoy!

You can also prepare in an air fryer or oven. They are great stuffed with goat or ricotta cheese as well.

  1. Those are so good. I like to pipe in seasoned ground meat and a bit of cheese before frying to make an entree.
