Hello all, I'm planning to make a lasagna tomorrow with some leftover ragu I have in the freezer and I wanted to know if there's a way to make a nice cheesy bechamel sauce? I ask because I really like cheese and have never really found bechamel to add much to the flavour of a dish :/

The sauce you’re looking for is mornay.
A cheesy bechamel is called Mornay sauce. It’s covered by most broad cookbooks like Joy of Cooking as well as French cookbooks.
You could replace bechamel with mozzarella and parmesan mixed together
Quite a lot of Italian recipes uses ricotta rather than bechamel.
I suggest you for the bechamel recipe of Bottura where he shows the technique to add a lot of parmigiano to bechamel
There is nothing complicated about this. Add shredded cheese but don’t heat it too much or it will break. Light heat so that the cheese will barely melt.
