



Bok choy Caecar’s
This is a very quick lunch, if you’re lazy like me and use pre cooked chicken.
5,5g carbs | 29g protein | 26g fat | 360 cals
Ingredients:
– 1 Bok Choy
– 1 Handful chicken
– ? Parmesan (to preferance)
– 3 ts cream fraiche
– Salt&pepper
(dressing)
– Olive oil
– 1 Garlic clove
– Onion powder
– Worchester sauce
– Lemon juice
Instructions :
Start with the dressing; finely grate garlic and
some parm. Combine with cream fraiche, dash of olive oil, worcestershire sauce. Add onion powder, S&P and a squeeze of lemon. Mix well. For one portion you don’t need to make much.
Next, wash and cut the bok. Transfer to a bowl (you can also do this in a plastic bag – less cleanup) and combine with most of the dressing and parm. (If your using a bag, just get some air in there and shake well)
Then add your chicken or protein of choice, rest of dressing and combine well.
Transfer to plate, finish with parmesan, ground pepper, salt and Voila.
The bok choy is in apparently in season now. I was amazed at how good it was. So much flavour, almost no carbs and very cheap. (0.9$ per)
If i was making this with traditional mini-romaine i’d probably add in some bacon and parmesan crisps.
