
Never liked deviled eggs as a kid, recently discovered it was just my mom’s deviled eggs I didn’t like. (Sorry mom, RIP.) Mostly because I HATE mayonnaise.
So here was my own solution:
Boil eggs for 12 minutes.
Cut eggs in half, remove yolks, place in bowl.
Smash yolks with fork, I added:
1 tablespoon sour cream
About 2 tablespoons (two strips worth but make three) crispy bacon directly in the yolk mix (made in air fryer, 380 degrees for 11 minutes) save one strip for garnish.
1 tablespoon pickle juice
Salt and pepper to taste
Spoon or pipe mixture into egg cavities, garnish with finely chopped chives, more bacon bits, and smoked paprika.
Dash a bit of Tabasco on top for the brave if desired.
Easy peasy.
